Are you thinking Spring when you hear Strawberry Scones? I sure am! I am so excited for warmer weather and spring and summer foods! These Strawberry Scones are very easy to make and are topped with a lemon glaze. You're going to love them! They're soft and buttery and make the best dessert. The lemon drizzle is tart and tangy and adds to the scone perfectly.

To me, scones seem fancy but in reality, they are quite easy to make! I've made a few varieties of scones including cranberry and blueberry and these strawberry scones are a favorite for sure! When I make a batch of scones, my family always gobbles them right up. Feel free to make a double batch if you like which is what I usually do since my kids will eat these like crazy. I had these ready to go warm from the oven right when my husband and 3 kids got home from school and they rated them 10/10, even my husband who doesn't always like scones.

Strawberry Scones Ingredients

  • Flour- I've used white-whole wheat flour and gluten-free flour and both work great!
  • Sugar
  • Baking powder
  • Salt
  • Cold butter
  • Hoosier Hill Farm Oat Milk Powder- This oat milk powder is great to have on hand! It is shelf stable and mixes well with water to make oat milk. It can also be mixed into coffee or smoothies and is a great option for those who are dairy-free.
  • Water
  • Lemon juice and zest
  • Strawberries
  • Egg
  • Vanilla
  • Powdered sugar
  • Plain yogurt

How to Make Strawberry Scones

For my strawberry scones, I used fresh strawberries. Frozen strawberries would also work well. You're going to make your oat milk first and then mix it with lemon juice to make a homemade oat buttermilk. Then, mix all of the dry ingredients together. Mix in the butter and then add in all of the wet ingredients.

Mix the dough and roll it into a ball, flatten it and then cut into triangles and bake. Scones are a pretty easy recipe to make! For the lemon glaze, just mix together the lemon juice, powdered sugar and plain yogurt. I used regular yogurt, not Greek so it was not too thick.

Are Strawberry Scones healthy?

Strawberry scones are a dessert and can be enjoyed as a dessert! There are a couple of healthier choices you can make! You can use white-whole wheat flour which adds fiber. In the scone part of the recipe, the amount of sugar used is very low. You can skip the sugar glaze if you like to keep these on the lighter side.

INGREDIENTS

  • 2 cups flour of choice
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped strawberries
  • 2 tablespoons Hoosier Hill Farm Oat Milk Powder
  • 1/2 cup water
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Lemon Glaze
  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1/3 cup plain yogurt

INSTRUCTIONS

  1. Preheat the oven to 350 degrees and spray a baking sheet with nonstick spray.
  2. Whisk together the oat milk powder and the water to make oat milk. Add in the lemon juice to make homemade oat milk buttermilk and set aside.
  3. Mix together the flour, sugar, baking powder, and salt in a large bowl.
  4. Use a grater to grate the butter into the flour mixture. Mix the butter together well with the flour mix. Mix in the strawberries and lemon zest.
  5. In another bowl, whisk together the oat milk buttermilk, egg, vanilla. Mix together the liquids and the flour mix with a mixing spoon. Knead any remaining flour with your hands. If the dough is sticky, add a little more flour with your hands.
  6. Roll the dough into a ball. Flour a surface with a little flour and flatten the ball into about an 8 inch circle that is 1 inch thick. Slice the dough into 8 scones.
  7. Bake the scones for 15 minutes until they are cooked through.
  8. Whisk together the powdered sugar, plain yogurt and lemon juice for the glaze. Once the scones have cooled, drizzle the glaze onto the scones.
