If you're a huge snacker like me, then you're going to love these Protein Peanut Butter Cups. I love dark chocolate peanut butter cups and decided to try adding in some collagen for extra protein and they are so good! With just 4-ingredients, these Protein Peanut Butter Cups are super simple to make and make the most wonderful slightly-healthier treat. Don't let the photos fool you- these peanut butter cups are massive- like the size of a regular sized muffin.

I love grabbing a Protein Peanut Butter Cup for a snack along with my afternoon coffee for the best little midday pick-me-up! I added in marine collagen for protein and of course, peanut butter has protein too so these are a pretty high-protein snack for candy!

  • Dark chocolate (you can also use milk chocolate if you prefer)
  • Coconut oil (to make the chocolate drizzly)

How to Make Protein Peanut Butter Cups

These Protein Peanut Butter Cups are very easy to make and they only take about 5 minutes of prep time! Start by melting your chocolate. You can use milk chocolate instead of dark chocolate if you prefer. Chop up the chocolate and place in a microwave safe container and add in the coconut oil. Microwave for 30 seconds at a time stirring each time until your chocolate is fully melted. 

In a silicone container or in muffin tins lined with muffin liners, pour a small amount of melted chocolate on the bottom of the container and a little up the sides. In a bowl, mix together the peanut butter and the collagen- melt your peanut butter if it is not runny. Add a small scoop of the peanut butter mixture to the top of the melted chocolate. Pour the remaining chocolate on the top until the peanut butter mixture until it is covered. Refrigerate until the chocolate is solid or freeze if you're in a hurry!

Prep time: 5 minutes  Cool time: 30 minutes  Total time: 35 minutes

INGREDIENTS

INSTRUCTIONS

  1.  In a microwave safe bowl, add the chocolate and coconut oil. Melt for 30 seconds at a time stirring well each minute until all of the chocolate is melted.
  2. In a muffin tin lined with paper muffin liners (spray with nonstick spray) or silicone muffin liners or in a silicone tray, pour a small amount of chocolate- maybe 2 teaspoons on the bottom of the muffin tin and around the sides.
  3. In a bowl, mix together the peanut butter and collagen. If the peanut butter is firm, you can melt it in the microwave for 30 seconds before mixing in the collagen. 
  4. Top the melted chocolate with the peanut butter mixture. Cover with the rest of the melted chocolate. 
  5. Cool in the fridge or freezer until the chocolate is hardened.
