Gyro Meatball Bowls

You're going to love these delicious Gyro Bowls which are loaded with homemade beef meatballs, feta cheese, tomatoes, cucumbers and more! While this time of year is cold here in Michigan, I love to make nourishing meals that help us feel our best and these bowls are perfect! Loaded with lean beef meatballs and lots of colorful, fiber rich produce, this meal is perfect for heart-health month which is February. Heart health is so important for overall health and many people suffer from heart-related illnesses and diseases. Lean beef can be part of a heart-healthy diet which you can see in this delicious Gyro Meatball Bowls recipe.
My entire family loves these bowls! My kids enjoy everything on them but leave off the pepperoncini since they're a little spicy and choose banana peppers instead. Feel free to use whatever ingredients you have. Tzatziki sauce, pita chips and kalamata olives would make some awesome additional toppings as well.

Gyro Meatball Bowls
INGREDIENTS
- Greek Meatballs
- 1 pound lean Ground Beef
- 1/4 cup breadcrumbs
- 1 egg
- 1/4 cup chopped fresh parsley
- Zest from 1 lemon
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon onion powder
- Gyro Bowls
- 1 pound orzo pasta
- 1 cup grape tomatoes, halved
- 1/2 cup red onion, chopped
- 2 cups English cucumber, diced
- 1/4 cup Greek dressing
- 1 can low-sodium garbanzo beans, drained and rinsed
- 1/2 cup hummus
- 3/4 cup feta cheese
- 12 pepperoncini peppers
- Lemon slices
- Parsley
INSTRUCTIONS
Preheat the oven to 425 F. In a large bowl, mix together all of the ingredients for the meatballs. Form the meat into balls that are about 1 tablespoon of meat.
Place on a sheet pan that is sprayed with nonstick spray. Bake for about 15 minutes until meatballs are cooked through and have an internal temperature of 160 F.
Meanwhile, boil a large pot of water and cook orzo according to directions. Drain pasta when it is fully cooked.
Mix together the tomatoes, onion, cucumber and Greek dressing together in a bowl.
Once orzo is cooked, divide orzo into bowls and top with meatballs, cucumber salad, garbanzo beans, a dollop of hummus, feta cheese, pepperoncini, a slice of lemon and if you desire, parsley.
