It's winter in Michigan and to get through the cold weather, every week I've been making a big pot of soup! This Creamy Tortellini Soup is super easy to make and so delicious too. Loaded with chicken, tortellini, lots of spinach, and tomatoes for a nutrient-packed meal.

In this Creamy Tortellini Soup, I used C.F. Burger Creamery Half and Half. C.F. Burger Creamery products are made in Detroit, MI 20 minutes from my home and I love supporting local brands. The C.F. Burger Creamery fat-free half and half is what makes the soup creamy and rich while still being full of nutrients from the veggies and chicken. A complete meal in a bowl! I love when I can make a soup filling where it is the entire meal and I don't have to pair anything with it. This soup has protein, veggies and carbs and is super kid-friendly.

  • Olive oil
  • Onions
  • Garlic
  • Tomato sauce
  • Canned diced tomatoes
  • Chicken
  • Chicken broth
  • C.F. Burger Creamery Fat-Free Half and Half
  • Black pepper
  • Spinach
  • Basil
  • Parmesan cheese

How to Make Creamy Tortellini Soup

This Creamy Tortellini Soup is super easy to make, especially if you use rotisserie chicken or have any leftover chicken cooked already. Otherwise, just cook your chicken however you like before making the soup. You can boil and then shred the chicken or pan fry it and cut it into pieces. 

Sauté your onions and garlic in olive oil in a large pot. Then, add in your diced tomatoes, tomato sauce, and chicken broth to the pot. Cook your tortellini in the broth for 5 minutes. Add in the chicken, spinach, and half and half. Top with parmesan cheese and fresh chopped basil.

Does this soup reheat well?

Yes! I love making a huge batch of this soup and reheating a bowl of it for lunch throughout the week. I would not recommend freezing it with the tortellini though so they don't get mushy.

Is Creamy Tortellini Soup healthy?

This soup has lots of health benefits! It is loaded with protein from the chicken and the cheese in the tortellini. It uses an entire bag of spinach which is loaded with vitamins A, C, K, folate, magnesium and iron. I swear eating a bunch of greens this time of year is helping me through the winter. The tomatoes and tomato sauce have lycopene, potassium, and vitamins A and C. So yes, this soup is healthy!

Creamy Tortellini Soup is so comforting and delicious with a creamy tomato sauce, cheese tortellini, chicken, tomatoes and spinach!
Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 mins

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 medium white onion, diced
  • 2 teaspoons minced garlic
  • 1 can no-salt added diced tomatoes
  • 2 cans tomato puree/sauce
  • 1 32-ounce container chicken broth
  • 20 ounce package of cheese tortellini
  • 2 cups cooked chicken, chopped
  • 1 teaspoon black pepper
  • 1 10 ounce bag baby spinach, chopped
  • 1 cup C.F. Burger Creamery Fat-Free Half and Half
  • 1/4 cup chopped basil
  • Parmesan cheese to top

INSTRUCTIONS

  1. Sauté the onions in a large pot over medium heat for about 4 minutes until they are translucent. Add in the garlic and salute for 1 minute longer.
  2. Add in the diced tomatoes, tomato sauce, and chicken broth to the pot. Cook your tortellini in the broth for 5 minutes until soft. 
  3. Add in the chicken, black pepper, chopped spinach, and half and half. Simmer for 5-10 minutes until the spinach is wilted and the broth is bubbling.
  4. To serve, top with parmesan cheese and fresh chopped basil.
