Banana Oat Breakfast Bars are delicious, nutritious and easy to make! Perfect for meal prep breakfasts or for snacks on-the-go.
You're going to love these Banana Oat Breakfast Bars! They are nutritious, super easy to make and can be enjoyed through the week. I've been having fun creating a nice breakfast for the week over the weekend such as pancakes, French toast, an egg casserole or something like that. I wanted to make a bar with a banana bread flavor that was full of nutrients and tasted delicious. These Banana Oat Breakfast Bars are the perfect mix of healthy and tasty!
Banana Oat Breakfast Bars Ingredients
- Bananas
- Applesauce or other fruit puree
- Coconut oil
- Egg
- Vanilla extract
- Brown sugar
- Ground flax
- Oat flour (you can buy it this way or just grind oats in a food processor until the are ground into flour)
- Chocolate- optional for the top of the bars
How to Make Banana Oat Breakfast Bars
These Banana Oat Breakfast Bars are super easy to make. Just mix all of the ingredients together which takes 10 minutes or less, pour into your greased baking dish and bake. I love how easy these bars are and that they store well for a few days.
Banana Oat Breakfast Bars Nutrition
These bars are packed with fiber from the flax, banana and oat flour. I kept them lower in fat by using more applesauce and less coconut oil. I kept them lower in sugar by using sweet fruit. I love sneaking flax into baked goods when possible for the boost of omega-3, fiber and protein. You can enjoy these bars as it or pair them with an egg or top with peanut butter.

Yield: 12 bars
Banana Oat Breakfast Bars
Banana Oat Breakfast Bars are delicious, nutritious and easy to make! Perfect for meal prep breakfasts or for snacks on-the-go.
Prep Time: 10 minutes Cook time: 20 minutes Total time: 30 mins
INGREDIENTS
- 2 ripe bananas, mashed
- 3/4 cup applesauce or other fruit puree
- 2 tablespoons coconut oil, melted
- 1 large egg, whisked
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar
- 2 tablespoons ground flax
- 1 1/2 cups oat flour (ground oats)
- Optional: chocolate to top (I love Hu Kitchen)
INSTRUCTIONS
- Preheat oven to 350 degrees and spray a medium sized rectangular baking dish with nonstick spray.
- In a large bowl, mix together the banana, applesauce, coconut oil, vanilla and egg.
- Mix in the brown sugar, flax and oat flour.
- Pour the mixture into the baking dish, smooth out with a spatula and bake for 20 minutes (after 10 minutes, add the chocolate if you wish) until a toothpick comes out clean when inserted into the center.
- Let the bars cool and cut into squares.
- These bars will store well covered on the counter for 3 days. They're really good warmed up for 20 seconds as well!
