Chicken Chilaquiles
Chicken Chilaquiles is the most flavorful breakfast dish loaded with a homemade salsa verde, tortilla chips, shredded chicken and cheese!
One of my very favorite dishes to order at a restaurant is chilaquiles! I was thinking about that it probably isn't too hard to make and as it turns out, it is very easy to make! These Chicken Chilaquiles are delicious and loaded with corn tortilla chips, homemade salsa verde, shredded chicken and mozzarella cheese. They are absolutely loaded with flavor and make the best breakfast, lunch or dinner.
What are chilaquiles?
Chilaquiles is a Mexican breakfast dish where corn tortillas are fried, covered in red or green salsa and topped with cheese. They have have chicken added or can be topped with a fried egg. They are often sprinkled with onions or cilantro.Homemade Salsa Verde
There are many store-bought salsa verdes on the market that are delicious so if you don't have time or desire, you can definitely use store bought salsa verde! If you want to make homemade salsa verde (green salsa), here are the ingredients you will need:
- Tomatillos
- Garlic
- Onion
- Poblano peppers
- Cilantro
- Lime juice
- Salt

INGREDIENTS
- Homemade Salsa Verde*
- 3 cups tomatillos, peeled and quartered
- 6 garlic cloves, peeled
- 1 white onion, cut into 6 pieces
- 1 cup chopped poblano peppers (or bell peppers or 1/4 cup jalapeno peppers)
- 1/4 cup cilantro
- Juice from 1 lime
- 1/2 teaspoon salt
- Chilaquiles
- 2 cups tortilla chips
- 1/2 cup shredded chicken
- 1/2 cup mozzarella cheese
- 3 tablespoons chopped cilantro
- 3 tablespoons minced white onion
INSTRUCTIONS
- Salsa Verde- On a large sheet pan, broil tomatillos, garlic cloves, onion, and poblano peppers on high for 15 minutes. Flip and broil for another 10 minutes. You want some black spots for flavor! Add in a handful of cilantro, juice from 1 lime and salt. Blend until smooth.
- In a large oven-safe skillet (cast-iron skillets work well), toss 1 cup salsa verde with your tortilla chips. Top with chicken and mozzarella.
- Broil for 3-4 minutes until cheese is melted. Top with cilantro and onion.
- Enjoy shortly after making as the chips will get soggy as leftovers.
