Apple Cinnamon Bagels require no boiling or yeast! The bagels have a crunchy top, are baked in the oven and ready in 30 minutes- this recipe makes a dozen bagels.
Do you love bagels? What if I told you that you could make homemade bagels in 30 minutes that require no boiling and no yeast? These Apple Cinnamon Crunch Bagels are made to be similar to Panera Bread's Cinnamon Crunch bagels that my son loves with the addition of apples. They're super delicious and are loaded with fresh apples and lots of cinnamon.
Apple Cinnamon Bagels Recipe
Apple Cinnamon Bagels are full of flavor with a brown sugar and cinnamon topping and delicious diced apples throughout. They're lightly crispy on the outside and chewy on the inside- just like a bagel should be. Smeared with cream cheese, these make the best breakfast or snack.
Tips for Making Homemade Bagels
Bagels sound like they can be difficult to make but when you skip the boiling and yeast, it makes them a lot easier and quicker to make. The cinnamon crunch bagels at Panera Bread are delicious and these are loosely made off of the idea of them with delicious sweet apples added to them.
- Baking your bagels on a baking mat or parchment paper makes cleanup a breeze and helps your bagels not stick.
- The reason you don't need yeast in this recipe is thanks to the homemade mixture of self-rising flour- flour, baking powder and salt.
- Using white-whole wheat flour works really well for these bagels because it adds fiber and nutrients to the bagels but bakes very similarly to all-purpose flour.
- Depending on the brand of yogurt you use, you may need a little extra flour if the dough is sticky.
- Do not overmix the dough.
- Skip using regular plain yogurt- your best results will be with Greek yogurt since it is thicker and has less liquid.
- Make as many bagels as you like. You can double or triple this recipe and freeze the extras.
- Leave plenty of room on the pan because the bagels will expand as they bake.

- Baking powder
- Kosher salt
- Cinnamon
- Brown sugar
- Vanilla Greek yogurt
- Apples- Cosmic Crisp or Honeycrisp works well
- Butter

INGREDIENTS
- 2 cups white whole-wheat flour + about 1/4 cup more for rolling out dough
- 4 teaspoons baking powder
- 1 1/2 teaspoons kosher salt
- 2 teaspoons cinnamon
- 3 tablespoons brown sugar
- 1 3/4 cups vanilla Greek yogurt
- 1 cup finely chopped apples
- Topping
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
INSTRUCTIONS
- Preheat the oven to 375 degrees F. Place a baking mat or parchment paper on a baking sheet. Spray with nonstick spray.
- In a large bowl, mix together the flour, baking powder, salt, cinnamon, brown sugar, yogurt and apples. Mix well. Mixture may be crumbly.
- Dust work surface with flour and place the dough on top of a floured surface. Knead the dough about 15 times until dough is combined and not sticking to your hand. If dough is sticky, add more flour until it is no longer sticky.
- Divide the dough into 12 balls. Roll each ball into ropes that are about 3/4 inch thick and join the ends to form your bagels.
- Bake bagels in the oven for 10 minutes. Meanwhile, mix together the brown sugar and cinnamon in a small bowl. Melt the butter in a separate bowl.
- Remove the bagels from the oven and brush with butter and sprinkle with cinnamon sugar.
- Bake for another 5 minutes until bagels are cooked through and lightly browned.
- Top with vegan cream cheese for extra deliciousness!
- Stores well in the fridge for up to 5 days. Freezes for up to 3 months.
