Lemon Herb Pasta

Lemon Herb Pasta is ready in less than 30 minutes and is loaded with lots of lemon, Parmesan cheese, garlic, and fresh parsley and basil!

Doesn't lemon just scream spring? Fresh herbs and lemon always remind me of when the weather is getting warmer! I made this incredibly flavorful Lemon Herb Pasta for an Easter or spring side dish and I think you're going to love it! I used whole-grain pasta, lemon juice, fresh parsley and basil as well as lots of Parmesan cheese. So good!


Lemon Herb Pasta Ingredients

  • Sfoglini Whole Grain Radiators Pasta
  • Olive oil or butter- totally up to you! It works well with both
  • Chopped garlic- can use fresh garlic or prechopped garlic
  • Lemon- zest and juice!
  • Parmesan cheese- I used grated but shredded would work really well here too.
  • Fresh parsley
  • Fresh basil
  • Black pepper- I like the kind in the grinder where it is course and fresh
  • Salt

How to Make Lemon Herb Pasta

Cook your pasta according to directions. Drain your pasta but save 1/2 cup of the pasta water. In a small saucepan, you're going to heat your olive oil or butter and sauté the garlic for 2 minutes. Add in the rest of the ingredients for the sauce and stir well. Toss with your pasta and serve. So easy and it comes together in only about 25 minutes.

I love using whole-wheat pasta in my cooking and this particular Sfoglini pasta has 8 grams of protein and 5 grams of fiber per serving which is going to keep you full for longer. The lemon juice is full of vitamin C and the parsley has vitamins A, C and K. Basil like other leafy greens is rich in vitamin K. This pasta makes an amazing side dish but feel free to bulk it up with some protein or veggies to make it more of a complete meal.

What to serve with Lemon Herb Pasta?

I love enjoying this dish as is or topping it with a protein like sautéed chicken breast or sautéed mushroom and broccoli. It is also great served as a side dish with whatever else you like.


Can I reheat lemon herb pasta?

Yes! This recipe is delicious reheated. Just reheat in the microwave until hot. This pasta stores well in the fridge for up to 4 days. If it is a little dry, you can add a tablespoon of water and then reheat it.

INGREDIENTS

  1. Boil a pot of water and cook pasta according to directions. Drain pasta but save 1/2 cup pasta water for later.
  2. In a small saucepan, add in the olive oil or butter and sauté the garlic for 2 minutes. Add in the lemon zest, pasta water, lemon juice, parmesan, parsley, basil, black pepper and salt. 
  3. Add the lemon sauce to the pasta and toss well. Serve immediately.
