Avocado Green Goddess Salad Dressing is the most flavorful and creamy dressing made with fresh avocado, parsley, cilantro and lime!
It's the New Year and I know many of us are trying to eat a little healthier. The salad is loaded with chicken, chickpeas, veggies, hard boiled eggs and the best Avocado Green Goddess Salad Dressing. Personally, when I eat better, I feel better so as we are into these cold winter months, I want to make sure to eat well so I feel well!
Avocado Green Goddess Ingredients
- Avocado
- Olive oil
- Lime juice
- Apple cider vinegar
- Parsley
- Cilantro
- Honey
- Salt
- Black pepper

How to Make Avocado Green Goddess Salad Dressing
Homemade salad dressings are so easy to make and whenever I end up buying dressing for awhile and then make my own, I always wonder why I don't just make salad dressing homemade all the time. It is easy, healthier and tastes better than any store bought dressing. How to make this dressing is so easy. Just blend all of the ingredients together until very smooth. Add a little water as needed to thin it out or to get it to blend all the way.

- I tossed the Avocado Green Goddess Salad Dressing on a bunch of massaged dinosaur kale and enjoyed it just like that and it was delicious!
- Topping for grilled chicken
- On roasted vegetables
How to Store Avocado Green Goddess Salad Dressing
Shockingly, this dressing does not brown! You know how if you leave out guacamole or an avocado for a bit, it browns? Well, this dressing does not turn brown. I stored mine in an air tight container in the fridge for 5 days and it was perfectly fresh on the 5th day! This dressing makes a large serving and more than you need for the recipe so you will have plenty leftover.

INGREDIENTS
- Salad
- 8-10 cups lettuce of choice (romaine, spinach, kale, etc.)
- 1-14.5 ounce can low-sodium chickpeas, drained and rinsed
- 1 1/2 cups cooked chicken
- 8 hard boiled eggs
- 1/2 cup thinly sliced radishes
- 1/3 cup thinly sliced red onion
- 1/4 cup chopped cilantro
- 1/4 cup chopped parsley
- Avocado Green Goddess Salad Dressing
- 1 large avocado
- 1/4 cup olive oil
- Juice from 1 lime
- 3 tablespoons apple cider vinegar
- 1/2 cup parsley
- 1/3 cup cilantro
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1 teaspoon black pepper
INSTRUCTIONS
- Add eggs to a small pot and cover with water by an inch. Boil water and turn off the heat. Let eggs cook for 12 minutes. To peel the hard boiled eggs, run the eggs under cold water, crack and gently peel.
- In a blender, add in the ingredients for the salad dressing. Blend until very smooth. Add in a splash of water as needed to help it blend.
- In a large bowl or on a serving platter, arrange salad and top with chickpeas, hard boiled eggs, chicken, radishes, red onion, cilantro and parsley.
- When serving, top salad with dressing.
