I am the biggest fan of baked oatmeal and this Chocolate Peppermint Baked Oatmeal is so perfect for the holidays! I would totally make this dish on Christmas morning for a protein packed, whole-grain breakfast that tastes just like the holidays. Baked oatmeal is super easy to make and I love eating it cut into pieces cold or warm. Or you can reheat it in a bowl with a little milk like regular oatmeal with some extra protein.
Chocolate Peppermint Baked Oatmeal Ingredients
- Quick oats- you can also use old-fashioned but I like the texture better of the quick oats in this recipe
- Baking powder
- Chocolate protein powder (can also use vanilla protein powder and add cocoa powder)
- Milk
- Applesauce
- Eggs
- Maple syrup
- Peppermint extract
- Optional fun toppings: dark chocolate, candy canes
How to Make Baked Oatmeal
Baked oatmeal could not be easier to make! Just mix together all of your ingredients in a bowl, transfer them to a sprayed baking dish and bake for about 30 minutes until set. So easy!
What is baked oatmeal?
Baked oatmeal is oats baked with milk and eggs and your choice of flavoring. It cuts in pieces almost like a piece of banana bread instead of in a bowl eaten with a spoon like regular oats.
Are baked oats healthy?
Yes! Baked oats are very healthy in my dietitian opinion. Oats are rich in fiber and have some protein. With the addition of milk, eggs and protein powder, this baked oatmeal becomes a nutrient packed meal. One piece of this baked oatmeal has 12 grams of protein.
How to store baked oatmeal
I store my baked oatmeal in a Pyrex dish with a lid on it. It stores well for about up to 4-5 days. Just reheat it as needed.

Chocolate Peppermint Baked Oatmeal
INGREDIENTS
- 3 cups quick oats
- 1 1/2 teaspoons baking powder
- 2 scoops chocolate protein powder
- 1 1/2 cups 2% milk
- 1/2 cup unsweetened applesauce
- 2 large eggs
- 1/3 cup sugar-free maple syrup or regular maple syrup
- 3 drops peppermint extract
- Optional toppings: melted dark chocolate, crushed candy cane
INSTRUCTIONS
- Preheat the oven to 350 degrees.
- Mix all of your ingredients together in a large bowl except for toppings.
- Spray a glass baking dish with nonstick spray and pour baked oatmeal batter into baking dish.
- Bake for 30 minutes until oats are fully set.
