Birthday Cake Protein Bars are chewy, flavorful and make the best high-protein snack that tastes like cake but is much healthier! No baking required and only 6-ingredients.
When it's your birthday, why wouldn't you want to celebrate all month long? My son Oliver is turning 6 and I thought it would be fun to make him a birthday cake flavored treat that is actually nutritious (with some real sprinkles thrown in there of course!). I went with a bar that I knew that I would love as well. These Birthday Cake Protein Bars are easy to make, packed with protein and low in sugar. Try them!
These Birthday Cake Protein Bars are soft and chewy with a delicious birthday cake flavor. The vanilla, cashew butter and salt help give that flavor and the sprinkles of course make them super festive. Wouldn't these make a fun homemade birthday gift?
Birthday Cake Protein Bars Ingredients
- Ella Vanilla Daily Beauty Protein Powder
- Cashew butter- it has a light flavor which is not as overpowering like peanut butter. You can use peanut butter for a less expensive option but you will taste the PB more in the bars. Walnut butter or pecan butter would work as well.
- Maple syrup or honey
- Vanilla extract
- Salt- brings out the sweetness
- Rainbow sprinkles
How to Make Birthday Cake Protein Bars
These birthday cake protein bars seriously take 5 minutes to make. Just mix together cashew butter, protein powder, maple syrup, vanilla extract, and salt until a dough forms. Press down onto a piece of parchment paper lined 8 x 8 dish. Sprinkle with sprinkles and lightly press the sprinkles into the dough so they don't fall out. Let chill in the fridge until firm and then cut into bars.

INGREDIENTS
- 1 cup cashew butter
- 1/2 cup Ella Vanilla Protein Powder
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2-3 tablespoons rainbow sprinkles
INSTRUCTIONS
- Mix together the cashew butter, protein powder, maple syrup, vanilla, and salt well in a large bowl until it forms a dough.
- Press the dough down on a parchment paper lined 8 x 8 dish. Top with sprinkles and lightly press the sprinkles into the dough.
- Let the bars chill in the fridge until firm (at least 30 minutes) and then cut into 8 bars.
