White Chicken Chili + Giveaway

We decided to head up north for the weekend with my family and how we divide things up is by each family bringing a meal or two. I was in charge of serving 9 people at this meal and therefore, needed to make a lot of food. This White Chicken Chili was perfect! I made it ahead of time and then just reheated it and cut the toppings up fresh. I served it with sourdough bread which was delicious!
How to Make White Chicken Chili
I like shredding my chicken in the slow cooker the night before and I had a large bag of white dried beans to use so I cooked my beans from scratch. Otherwise, you can totally use low-sodium canned beans. I used green pepper, onions, celery and corn for my veggies. You can use any color of pepper, zucchini, tomatoes, mushrooms, etc. Feel free to use what you have on hand. I sautéed my veggies in the pot, added in the chicken, beans, spices, chicken broth and green salsa. I meant to buy green chili peppers for this chili but forgot and the salsa verde was even better!! Let simmer until the veggies are soft and broth thickens a bit.
White Chicken Chili Toppings
The topping options are endless so feel free to use what you have on hand and what you love! I used avocado, plain Greek yogurt (or sour cream), cilantro and lime wedges. Some other amazing toppings would be corn chips or tortilla chips, green onion, thinly sliced radishes, and shredded cheese.

White Chicken Chili
INGREDIENTS
- 2 tablespoons olive oil
- 3 cups chopped celery
- 1 1/2 diced onions
- 3 medium diced green peppers
- 2 cups frozen corn
- 4 minced garlic cloves
- 2-32 ounce containers low-sodium chicken broth
- 16 ounce container salsa verde
- 4 cups white beans
- 3 cups shredded chicken
- 1 tablespoon cumin
- 2 tablespoons chili powder
- 2 tablespoons lime juice
- Toppings
- Plain Greek yogurt or sour cream
- Cilantro
- Lime wedges
- Avocado
INSTRUCTIONS
- In a large pot, heat olive oil over medium-high heat. Add in celery and onions. Saute for 3 minutes. Add in the green peppers, corn and garlic to the pot and saute for another 5 minutes.
- Add in the chicken broth, salsa verde, beans, chicken, cumin and chili powder. Let simmer for about 15 minutes. Add in the lime juice.
- Serve in bowls and top with Greek yogurt/sour cream, cilantro, lime wedges and avocado.
