Do you love peanut butter like my family does? Then you're going to love these Peanut Butter Oatmeal Bars that are an awesome breakfast or snack. They're super easy to make, are loaded with nutrients and are perfect for meal prep. The bars are only made with 3-ingredients and are super- kid- and adult-friendly.

How to Make Peanut Butter Oatmeal Bars

I almost feel silly sharing this recipe because it is so simple! With only 3-ingredients, these bars come together super quick. Just mix together old-fashioned oats, peanut butter and honey or maple syrup (either works!). Some additional add-ins that are great are ground flax or chia seeds for a boost of protein, fiber and omega-3 fatty acids- add 1-2 tablespoons. Press the dough into a glass baking dish and refrigerate for 10-15 minutes until firm. Cut into bars and store in the fridge or freezer. I topped my bars with a drizzle of dark chocolate and some salted peanuts but that is optional.

I also want to make it very clear that I am not only saying that we are the biggest peanut butter and peanut fans but really prove it! My son Oliver, who is 5 years old, chooses peanut butter for most of his snacks. The other day, I realized that he really had a lot of peanuts and peanut butter so I mentally went through what he ate that day and he had EIGHT servings of peanuts and peanut butter!!!

Our pantry is stocked with tons of these since my kids love them and they are a great source of protein, fiber and other vitamins and minerals. My son is slim and I am always looking to load him up with nutrients and peanuts are a good nutrient dense option for him.


Are peanut butter oatmeal bars healthy?

Yes! These peanut butter oatmeal bars are loaded with nutrients! Oats are high in fiber and contain some protein. Peanuts and peanut butter are loaded with protein. If you want these bars to be a little lighter, you can skip the chocolate but it is very delicious!

INGREDIENTS

INSTRUCTIONS

  1. Take a 9 x 9 baking dish (or any medium sized square or rectangle dish) and cover it with parchment paper.
  2. Heat peanut butter in the microwave to make it easier to mix.
  3. In a large bowl, mix together the peanut butter, old-fashioned oats and syrup or honey. You may need to use your hands to mix at the end as the mixture gets thick like cookie dough.
  4. Press the mixture evenly on the bottom of the baking dish and flatten with a spatula. If desired, top with a drizzle of dark chocolate and peanuts. Place the pan in the fridge or freezer for 10-15 minutes until the bars are firm.
  5. Cut into pieces. Stores well in the fridge for up to a week. You can also store in the freezer for up to 6 months.
