Last year, I made homemade caramel and could not believe how absolutely delicious it was. Since it is caramel apple season, I wanted to try to make my own caramel apples with homemade caramel. Once you have tried the best caramel apples, you will not want to go back to store bought ones. The caramel is sweet, rich and incredible. It takes only about 20 minutes to make and the caramel is buttery, sweet and so good.

After visiting the apple orchard this fall, spend a little time making this homemade caramel for caramel apples and you will be so glad that you did. My daughter says to say that these are "very, very kid-friendly and delicious".
I have to say that these caramel apples are totally a treat! I am not claiming that they are healthy or anything like a lot of my recipes. They are total indulgence and sometimes, that is 100% okay. One thing I did try was I swapped half and half for the typical heavy whipping cream and it turned out just as good so I would continue to do that in the future.
You can enjoy these apples as is like we did or dip them in nuts, a sprinkle of sea salt, sprinkles or chocolate. We like them just with the caramel though!
A super important part of making caramel is taking the temperature of the caramel throughout the cooking process which lets you know when the caramel is done cooking. INGREDIENTS
- 1/2 stick unsalted butter (1/4 cup)
- 1/4 cup half and half
- 1 1/2 tablespoons water
- 1/2 cup sugar
- 2 tablespoons light corn syrup
- 4 apples of choice- Honeycrisp work well
INSTRUCTIONS
- Cut butter into small pieces and add in heavy cream in a microwave-safe bowl. Heat in the microwave for 1-2 minutes until butter has melted.
- In a medium sized saucepan, mix together the water, corn syrup and sugar carefully so you don't splatter the sugar up the sides.
- Heat over medium heat until the sugar comes to a boil. Cover with a lid for 1 minute to add moisture to the pan to remove sugar from the sides.
- Attach a candy thermometer (**Use code MINutritionist for $10 off your Taylor thermometer or food scale order or anything at TaylorUSA.com.) to the side of the saucepan and cook sugar until it reaches exactly 320 degrees (about 5 minutes). The sugar will be light amber colored.
- Right when the sugar is 320 degrees, pour 1/6 of the butter and cream mixture into the pan and stir it with your candy thermometer. Continue until all of the butter and cream is mixed into the sugar. It will be bubbling a lot.
- The temperature will drop with the addition of the cream/butter. Continue cooking until the temperature reaches exactly 245 degrees.
- Meanwhile, stick a skewer stick into your apples. As soon as your caramel sauce is ready, dip the apples into the caramel- you may have to lightly roll the apples in the sauce. Work quickly as the caramel hardens fairly fast.
- Place caramel apples on parchment paper to dry for at least 5 minutes.
- Store on parchment paper in the fridge for up to 5 days.
