Loaded Breakfast Board
Loaded Breakfast Board is packed with whole-grain apple cinnamon coffee cake, hard boiled eggs, SnapDragon apples, bacon, bagels, and lots of fruit for a fun breakfast or brunch!
I've been wanting to make a beautiful loaded breakfast board for awhile and finally got a chance to make one! Loaded with whole-grain apple cinnamon coffee cake, hard boiled eggs, SnapDragon apples, bacon, waffles, and lots of fruit. I knew that my kids would love this style of breakfast as my entire family is huge breakfast eaters.
SnapDragon Apples
Have you heard of SnapDragon apples? They're grown in New York by 152 family farmers and are described as spicy sweet with a hint of vanilla. They're so delicious! We go through about 8 pounds of apples per week and love snacking on apples and these SnapDragon apples make a great addition to our apple lineup. They're super crunchy and great to snack on. I used SnapDragon apples on the breakfast board sliced up and also in the whole-grain apple cinnamon coffee cake.
They're considered the perfect snacking apple, are great in salads or paired with rich cheeses. They were developed by Dr. Susan Brown from Cornell University and came from the seeds of honeycrisp apples. Find out where you can buy SnapDragon apples here and follow them on Instagram.
Whole-Grain Apple Cinnamon Coffee Cake
Yes! This coffee cake is so delicious. I always bake with white whole-grain flour to add fiber to the recipe. It bakes just like regular white flour in my opinion and is more nutritious. This coffee cake is loaded with finely chopped SnapDragon apples, lots of cinnamon and has less sugar than your typical coffee cake. I topped it with a cinnamon streusel topping because, well, it's delicious!
Breakfast Board Ingredients
You can put whatever you want on your breakfast board! Use what you have on hand, what your family loves, etc.
-Hard boiled eggs- the easiest for grab and go eggs on the board. Top with everything bagel seasoning if you like or hot sauce.
-SnapDragon Apples
-Whole-Grain Apple Cinnamon Coffee Cake
-Bacon- bacon is easy to grab on this board so I went with that but sausage would work well too.
-Mini bagels- so easy since they're already made and you just need to put them on the board. I went with cinnamon raisin flavor.
-Lots of fruit- I recommend adding a lot of fruit to your breakfast board because that is what is going to give your board a lot of color and make it look the prettiest. Some awesome options are SnapDragon apples, berries, kiwi, oranges, blood oranges, pineapple, bananas and grapes. Truly, use what you have on hand.
Prep Your Board Ahead of Time
When my family wakes up in the morning, we are pretty much ready to eat! I recommend making the coffee cake the night before you're going to enjoy it and boiling and peeling the eggs to save time. That way, this board will come together in about 15 minutes in the morning.
Party Breakfast Board
I think that this breakfast board would be awesome for Easter morning or if we are thinking awhile from now, Christmas morning. It would be great for having guests over in the morning. Serve with lots and lots of coffee! You could make a few of these boards for a larger gathering. How fun would that be!

INGREDIENTS
- 1 3/4 cups white whole-wheat flour
- 1/2 cup brown sugar
- 1/2 cup milk of choice
- 1/2 cup unsweetened applesauce
- 2 teaspoons cinnamon
- 1 cup chopped SnapDragon apple
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons lemon juice
- 1 teaspoon vanilla extract
- Cinnamon Streusel Topping
- 1 teaspoon cinnamon
- 1/4 cup white whole-wheat flour
- 1/4 cup brown sugar
- 2 tablespoons melted butter
- Sliced SnapDragon Apples
- Hard boiled eggs
- Bacon
- Mini bagels
- Fruit- oranges, strawberries, blueberries, etc.
INSTRUCTIONS
- Preheat oven to 350 degrees. Spray a loaf pan or small glass baking dish with nonstick spray.
- Mix together all ingredients for cinnamon coffee cake and stir well.
- Mix together ingredients for cinnamon streusel topping until crumbly.
- Pour batter into pan, top with streusel mix and bake for about 30 minutes until cake is cooked through.
- Let cool for about 15 minutes and slice.
- Add eggs to a medium sized pot and fill with water. Boil water and cook for 12 minutes. Drain water and run over cold water. Peel immediately under very cold water (helps the shells come off easier).
- Cook bacon until crispy on a pan or griddle.
- Slice fruit. Pour maple syrup in a small bowl. Toast waffles.
- Serve food on a cutting board, slate chalkboard or a serving board. Arrange coffee cake, boiled eggs, bacon, bagels and fruit carefully to make a pretty design.
