Growing up, my mom would make Chicken Satay with Peanut Sauce and it is one of our favorite recipes. It is so full of flavor and actually, really easy to make! Since the weather is getting warmer, I wanted to share the recipe which is awesome for summer grilling. The yummy sauce is made with peanut butter, lime juice, soy sauce, Mazola® Corn Oil and more. How to Make Chicken Satay with Peanut Sauce
This recipe is actually really easy and uses ingredients that you most likely have on hand. The peanut sauce has:
-Peanut butter
-Lime juice
-Low-sodium soy sauce
-Rice vinegar (apple cider vinegar works well too)
-Chopped garlic
-Mazola® Corn Oil- This oil is an all-purpose cooking oil that is heart healthy*. It can be used for baking, grilling or stir-frying. It is perfect in marinades such as in this peanut marinade. It has a neutral flavor so it can be used in a variety of ways and lets the flavor of the dish really stand out. It also has a high smoke point making it perfect for grilling.
First you slice the chicken in strips and thread them on wooden or metal skewers. Then, you combine all of the ingredients for the marinade, marinate for a while- at least 15 minutes but up to overnight and then grill. Grill until chicken is cooked through and has some grill marks. Top with chopped peanuts and serve with lime slices.
How To Eat Chicken Satay with Peanut Sauce
You can eat the chicken satay right off of the skewer. It is delicious served over a salad, with grilled vegetables or over rice. It is delicious as leftovers and I highly recommend doubling the recipe and then enjoying this chicken over a couple of days. You won't regret it!
Why do we love this chicken satay so much? It is so loaded with flavor and something about the peanut butter with the soy sauce and lime juice is SO delicious! Plus, when you grill it, it is even better. My mom always made it for us growing up, especially in the summer.
Also, if you don't have a grill, feel free to bake it or sauté it. You don't have to add this peanut chicken to kebab sticks if you don't feel like it. You can just grill it as chicken breasts if you like. It is delicious either way.

Chicken Satay with Peanut Sauce
Chicken Satay with Peanut Sauce features flavorful grilled chicken skewers marinated in a peanut sauce with peanut butter, lime juice, soy sauce and more.
Prep Time: 15 minutes Cook time: 10 minutes Total time: 25 minutes
INGREDIENTS
- 1 pound boneless, skinless chicken breasts
- 1/3 cup peanut butter
- 2 tablespoons Mazola® Corn Oil
- 1/4 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoons chopped garlic
- 2 tablespoons lime juice
- 1 lime, cut into wedges
- 1/4 cup chopped peanuts
INSTRUCTIONS
- Cut chicken into 1 inch wide long strips and skewer chicken onto wooden kebabs or metal kebab skewers.
- Whisk together the peanut butter, oil, soy sauce, vinegar, garlic and lime juice.
- In a large dish or zipped bag, add about half of the peanut marinade with the chicken and mix well so that all of the chicken is coated in the marinade. Let marinate for at least 15 minutes if time allows- it is not required.
- Preheat grill to high and cook chicken skewers for about 4 minutes per side until chicken is cooked through and has grill marks.
- Top with chopped peanuts, the additional peanut sauce and serve with lime wedges.
