Apple Bacon Spinach Salad with Dijon Vinaigrette
Apple Bacon Spinach Salad with Dijon Vinaigrette is loaded with crispy bacon, hardboiled eggs, crispy sweet apples and mushrooms with a tangy Dijon bacon dressing!
This Apple Bacon Spinach Salad with Dijon Vinaigrette just screams summer! It is perfect for a picnic and can be enjoyed as an entrée or as a main dish. Loaded with Michigan EverCrisp apples, mushrooms, crispy bacon, hardboiled eggs and a Dijon bacon vinaigrette. When we have this salad for a meal, it disappears so quickly.
How we started eating this salad was that my sister and her fiancé made it for my whole family up at my parent's farm. Natalie is known for making extreme amounts of food and we love joking her about it. She will easily make enough food for several meals when she cooks one meal. She made the hugest amount of this salad and somehow, we ate it all and there were no leftovers. We couldn't believe it!
I highly recommend enjoying all of the ingredients on this salad. All of the items together are SO delicious and pair well together. Typically, I do not even enjoy raw mushrooms but in this salad, it is so good. The dressing is so delicious too with a little bacon grease, Dijon mustard and honey. If you don't want to use the bacon grease, no problem. Just use olive oil instead.
EverCrisp apples are a cross between a Honeycrisp apple and a Fuji. They have a long shelf life and stay crispy and sweet for months. I love eating them raw best and they work well in a variety of recipes like this spinach salad.
Apple Bacon Spinach Salad with Dijon Vinaigrette

Apple Bacon Spinach Salad with Dijon Vinaigrette
Prep Time: 5 minutes Cook time: 10 minutes Total time: 15 mins
INGREDIENTS
- 8 slices bacon
- 6 cups baby spinach
- 1 large thinly sliced EverCrisp apple
- 1 cup sliced raw mushrooms
- 4 hardboiled eggs, quartered
- 1/2 red onion, sliced
- Bacon Vinaigrette
- 2 tablespoons bacon drippings
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 cup red wine vinegar
- 1 1/2 tablespoons dijon mustard
- 2 teaspoons honey
INSTRUCTIONS
- Cook the bacon according to instructions on a griddle or skillet, until crispy. Save the drippings from the bacon for the vinaigrette. Chop bacon into small pieces.
- Whisk together all ingredients for bacon vinaigrette.
- Toss spinach with mushrooms, apples, bacon, eggs, onions and dijon bacon vinaigrette.
