Healthy Chicken Taco Bar
Healthy Chicken Taco Bar features chili lime grilled chicken and a ton of toppings like cheese, tomatoes, cilantro, salsa, plain quark (similar to sour cream) and more for a fun meal where everyone can build their own tacos!
This is the perfect taco bar loaded with tons of taco bar toppings! We love having Mexican food at least once a week if not more. One of our favorites that is actually very simple is a healthy chicken taco bar. I marinate the chicken in a delicious chili lime marinade and then grill the chicken along with peppers and onions. Or you can throw the seasonings in the slow cooker with the chicken and until it falls apart. Then, we set out a ton of toppings so everyone can make their own. It makes for a delicious meal that our whole family loves.
Chicken Taco Toppings
There are so many different toppings that you can make for healthy chicken tacos that I had trouble deciding what to put on these. I usually making a taco bar with little bowls of all of the different toppings. My kids love building their own tacos. Sure, it usually results in a mess and a taco that is way too full but they have a lot of fun and enjoy trying all different toppings that way.
Taco Bar Toppings
-Shredded sharp cheddar cheese
-Tomatoes
-Black beans
-Cilantro
-Shredded lettuce
-Black olives
-Corn
-Jalapenos
-Bell peppers
-Salsa- salsa verde and regular salsa
-Green onions
-Red onion
-Red cabbage
-Guacamole or chopped avocado
-Chopped radishes
-Greek yogurt
What kind of tortillas to use?
You could try my 3-ingredient whole wheat tortillas! They are actually really easy to make. Otherwise, I recommend yellow corn tortillas or store-bought whole-wheat flour tortillas. We use both all the time.
Chili Lime Chicken Marinade
Skip the store-bought taco seasoning that is packed with tons of salt. I always make my own taco seasoning because it is super easy and I have all of the ingredients in my pantry anyways. What seasonings you need are: chili powder, cumin, onion powder and garlic powder. Then, add in lots of lime juice and marinate your chicken for at least 30 minutes or up to overnight.
When to serve a chicken taco bar meal
Of course a chicken taco bar would be amazing for a birthday party or any other party but it is also wonderful for a regular dinner for your family. When it is just my family of 5, we may do less toppings or at least do smaller portions of each. Since this meal isn't hard, you can make it anytime. It is a fun meal that everyone will love.

INGREDIENTS
- Chili Lime Grilled Chicken
- 1 1/2 pounds boneless, skinless chicken breasts
- 2 tablespoons lime juice
- 2 tablespoons olive oil, divided
- 2 teaspoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 large white onion, sliced
- 2 bell peppers, sliced
- Toppings- choose which ones you like!
- Wunder Creamery plain quark- delicious mixed with lime juice
- Salsa
- Sharp cheddar cheese
- Black olives
- Black beans
- Shredded lettuce
- Green onion
- Diced avocado
- Cilantro
- Tomatoes
- Jalapenos
- Corn
- Salsa- green and red
- Guacamole
- Chopped radishes
- Red onion
- Red cabbage
- Tortillas of choice
INSTRUCTIONS
- In a glass container or a gallon sized ziploc bag, combine the lime juice, 1 tablespoon olive oil, cumin, chili powder, onion powder, garlic powder and chicken breasts. Coat chicken in the marinade and marinate for at least 30 minutes or up to overnight in the fridge. ***Alternatively, you can toss the marinade ingredients in the slow cooker with the chicken and cook for 4 hours until the chicken easily falls apart and is shredded.
- In a large piece of aluminum foil, toss together the sliced peppers and onions with the remaining olive oil. Fold the ends of the aluminum foil shut.
- Turn your grill on medium-high heat and grill the chicken breasts until cooked through and has light grill marks- about 5 minutes on each side. Cook the packet of the peppers and onions for about 7 minutes on the grill watching it carefully so it doesn't burn.
- Meanwhile, cut up all of the toppings for the taco bar. Once the chicken is done, cut it into thin strips. Take the peppers and onions out of the packet and place into a bowl. Arrange everything in bowls on your table or on a counter to serve.
- Toast tortillas by heating tortillas directly on your stove burner for about 30 seconds on each side.
- Assemble your tacos with whatever ingredients you like!
