Chocolate Dipped Ice Cream Cones

Summer is coming and it is time to start our daily ice cream obsession! Last summer, the kids, Troy and I would come home from the pool, go on the front lawn and have some ice cream. Just a little scoop each night but it was a tradition that we all looked forward to. For a fun surprise for my kids, I made these Chocolate Dipped Ice Cream Cones and I think I won a Mom of the Year award with my kids that day!
It feels a little silly even to share how to make these Chocolate Dipped Ice Cream Cones but since I had never thought to make them before myself, I thought that this little recipe could help give you an idea for a fun dessert to make that is slightly different from just having ice cream in a cake cone (which I love too). These Chocolate Dipped Ice Cream Cones would be awesome for birthday parties or any summer gathering.
Chocolate dipped ice cream cones are super easy to make. Just heat chocolate chips with coconut oil on the stove in a double boiler or in the microwave stirring frequently and dip the top of the cones in the melted chocolate mixture. Then, quickly roll in either crushed peanuts, chocolate chips or sprinkles (or whatever else sounds good!).

Chocolate Dipped Ice Cream Cones
Chocolate Dipped Ice Cream Cones
INGREDIENTS
- 1/4 cup milk chocolate or dark chocolate chips
- 1 teaspoon coconut oil
- 4 waffle cone ice cream cones
- Toppings
- Crushed Peanuts
- Sprinkles
- Chocolate chips
INSTRUCTIONS
- In a microwave safe bowl, combine chocolate chips and coconut oil. Heat in 20 second increments stirring each time to avoid burning. Continue to heat for about 1 1/2 minutes until chocolate is fully melted and smooth.
- Line a baking sheet with parchment paper. Carefully dip the top inch of each ice cream cone into the chocolate and immediately roll it in your toppings (peanuts, sprinkle, and/or chocolate chips) or sprinkle them onto the melted chocolate.
- Set the cones with the top-side down to cool (otherwise, the toppings will flatten on one side).
- Place all of the dipped cones into the fridge for about 15 minutes to cool.
- Fill with Prairie Farms ice cream and enjoy!
