Chicken Sausage and Broccoli Pasta
Chicken Sausage and Broccoli Pasta is ready in under 30 minutes and is loaded with whole-grain pasta, chicken sausage, broccoli, parmesan cheese and garlic!
On a weeknight when you don't want to spend a lot of time in the kitchen but want something delicious to eat, I have the perfect meal. This Chicken Sausage and Broccoli Pasta is healthy, ready in about 25 minutes and is super tasty! I hope you love it.
For the chicken sausage, I used a fresh sausage that needed to be cooked but feel free to use any sausage you like. The better tasting your sausage is, the better that this dish will taste. I had a lot of fresh broccoli on hand to use but frozen works just as well. Use whatever you have or whatever is cheaper.
For the pasta, I used a whole-wheat pasta variety. I recommend any kind of whole-wheat pasta you like or a bean based pasta. I used grated parmesan cheese but shredded or shaved parmesan would work well too. If you want this Chicken Sausage and Broccoli Pasta to be extra cheesy, I would add in some mozzarella cheese. The parsley adds lots of fresh flavor so I don't recommend skipping it.

Chicken Sausage and Broccoli Pasta
INGREDIENTS
- 8 ounces whole-grain pasta or chickpea pasta of choice
- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced into coins
- 1 cup diced onion
- 2 cups chopped broccoli
- 1 tablespoon chopped garlic
- 1 teaspoon black pepper
- 1 cup low-sodium chicken broth
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped parsley
INSTRUCTIONS
- Boil a pot of water and cook pasta according to directions. Drain pasta but save 1/4 cup pasta water.
- In a large skillet over medium-high heat, heat olive oil and cook sausage for 3-4 minutes until sausage is browned stirring frequently.
- Add in the onion and broccoli and cook for about 4 minutes until onions are soft and browned and the broccoli is softened.
- Add in the garlic and cook for 1 minute more.
- Add in the black pepper and chicken broth and simmer for 2 minutes. Toss the parmesan cheese and parsley into the pasta.
