Harvest Salad with Apple Cider Vinaigrette
Harvest Salad with Apple Cider Vinaigrette is loaded with the season's best grapes, pears and apples along with honey candied almonds and cashews!
Although I am sad that summer is over, I do love harvest foods. We went to my parent's farm recently and found these adorable tiny wild apples and picked some pears and grapes and I had to have them all on a fall salad. I created this harvest salad with apple cider vinaigrette to fully encompass all of the fall flavors! I wanted to keep it easy though because back to school time is super busy.

How to Make Apple Cider Vinaigrette
The apple cider vinaigrette is just whisked together apple cider from a local orchard (for maximum flavor), apple cider vinegar, olive oil, onion powder, salt and pepper. So simple but really delicious!
How to Make Honey Candied Nuts
This was a little experiment that turned out so good! I threw some roasted cashews and almonds in a pan with some honey and let them cook for a few minutes and they turned out so delicious! So much flavor but ridiculously easy too. Just watch them super carefully because nuts burn so quickly.
You can enjoy this harvest salad as a side dish or make it a complete dish with some grilled chicken or more filling with some cheese like blue cheese or feta. Or make a side of garlic bread to go with it. This harvest salad is loaded with vitamins and minerals from the fruits and veggies. The nuts are protein and fiber rich! A great nutritious salad that seems like you put more effort into it but it is actually really simple.

Harvest Salad with Apple Cider Vinaigrette
INGREDIENTS
- 1/4 cup almonds
- 1/4 cup cashews
- 2 tablespoon honey
- 6 cups baby spinach
- 1 thinly sliced ripe pear
- 1 thinly sliced apple of choice
- 1/2 cup grapes- concord or another variety
- Apple Cider Vinaigrette
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 3 tablespoons apple cider
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- Salt to taste
INSTRUCTIONS
- In a small nonstick pan, toast nuts with honey and let caramelize over medium-low heat for about 2-3 minutes. Watch very carefully so that they do not burn.
- Whisk together ingredients for apple cider vinaigrette.
- In a bowl or on a platter, lay out spinach and top with toasted nuts and fruits. Top with vinaigrette or serve on plates and then top with vinaigrette.
