Blueberry Pie Oatmeal Bars are loaded with homemade blueberry pie filling nestled between two chewy oat layers. They are nutritious, gluten-free and vegan and make the perfect breakfast or snack!
We love to switch up our breakfast options and these blueberry pie oatmeal bars are perfect! We enjoyed them outside on our patio on a hot summer morning with a cup of coffee and it was wonderful. They are hearty, filling and taste kind of like dessert with the blueberry pie filling. These blueberry pie oatmeal bars were enjoyed by my entire family of all different ages and I think that you will love them too.On Father's Day, my sister's fiance made the best blueberry crumble. I asked him how he made the blueberries taste so flavorful and he said that adding lemon and cinnamon to blueberries really brings out the flavor. I tried it and he was totally right! A slightly tart but mostly sweet filling that really makes these bars great.
When I was first planning this recipe, I wanted to make the bars more for dessert but they were even better for breakfast. Loaded with old-fashioned oats, they were the perfect addition of whole-grains and fiber. I lowered the sugar a ton compared to what would normally be in this type of recipe to make the oatmeal bars healthier.
You can enjoy these blueberry pie oatmeal bars for breakfast, a snack or even a dessert. They can be picked up with your hands or eaten with a fork. Store them in the fridge and enjoy at room temperature, heated or cold.
To help the oats stick together, I used Planet Oat® Vanilla Oatmilk which I found at Kroger which is so tasty on its own and worked great in this recipe.

Blueberry Pie Oatmeal Bars
INGREDIENTS
- Oat Bar Layer
- 1/2 cup Planet Oat® Vanilla Oatmilk
- 3 cups old-fashioned oats, divided into 2
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoons baking powder
- 1/2 cup applesauce
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- Blueberry Pie Filling
- 2 cups blueberries, fresh or frozen
- 1/3 cup water
- 2 tablespoons lemon juice
- 1/2 teaspoon cinnamon
- 1/3 cup maple syrup
- 2 tablespoons cornstarch
INSTRUCTIONS
- In a saucepan over medium heat, cook blueberries, water, lemon juice, syrup and cinnamon and simmer until blueberries turn into a sauce. Mix the cornstarch with a little bit of water until smooth.
- Add the cornstarch mixture into the blueberry sauce and whisk well. Simmer until sauce is thickened and remove from heat.
- Preheat oven to 375. In a food processor, blend together all ingredients for the oat layers except for 1 1/2 cups of the oats. Once blended, mix in the rest of the oats.
- Cover a baking dish with parchment paper. Spread half of the oat mixture onto the bottom of the dish evenly.
- Carefully spread blueberry pie filling over the first oat layer. Spread the rest of the oat mixture gently on top of the blueberry pie filling making sure to cover the whole blueberry layer.
- Bake for 20 minutes until oats are cooked through. Remove from oven and let cool at least a bit and cut into 8 squares.
These look amazing...unfortunately, the oat milk puts me off since I'll use just for this recipe and then throw the rest of it away, I steer away from "unusual" ingredients like this which must be used up quickly. Any thoughts on how to replace the oat milk?

DeleteWell that seems pretty straightforward! I was thinking maybe since it was vanilla oat milk, I'd need to add vanilla or something!

ReplyDeleteI do not calculate calories for my recipes. I make my recipes healthy and do not believe in counting calories.
