Grilled Chimichurri Chicken
Grilled Chimichurri Chicken is
marinated in a delicious chimichurri sauce made with fresh parsley, cilantro,
garlic and red onion, grilled to perfection and topped with more flavorful
sauce!
It's
time to break out the grill finally! I am so excited because grilled food is my
favorite. It's been a long winter and with months of having to stay at home
this spring, any little bit of summer fun sounds amazing! I love marinating
chicken and grilling it along with a bunch of veggies and came up with this
delicious grilled chimichurri chicken. It is loaded with flavor that everyone
will love.

Grilled Chimichurri Chicken. Adalyn asked me if I bought the sauce and I told
her that I made it. She said "Mom, this is the best chicken that I have
ever had." My parents both really loved it too and even baby Lily who is 9
months old loved it. A hit all around! Tons of fresh flavor that everyone can
enjoy.
How to Make Grilled Chimichurri Chicken
First, I marinated the chicken in
some of the chimichurri sauce to soak up the flavor. You make a pretty large
batch of the sauce so that you can top your grilled chicken with more fresh
chimichurri sauce after it is done grilling. I blended up cilantro, red onion,
parsley, Mazola Corn Oil, vinegar,
garlic and spices for this sauce. It is so easy to make and has the best fresh
flavor. I love it!
After the chicken is marinated,
you grill it until the chicken is cooked through and has nice grill marks on
it. Then, top with more of the chimichurri sauce. I always grill some
vegetables along with the chicken to make a complete meal but feel free to pair
with it whatever you want.
I remember the first time that I tried a chimichurri sauce. It was loaded with fresh herb flavor and I couldn't get enough of it! I don't even like cilantro at all but really like this sauce for some reason. So if you are not typically a fan of cilantro, I recommend trying this sauce anyways because you may love it!
I love cooking grilled chicken because it is a better-for-you meal option that tastes amazing and can have so many different flavors. We love barbecue chicken, Greek chicken marinade, Hawaiian chicken marinade and more. There are so many great options!
I like using the Mazola Corn Oil for this marinade because it has a mild flavor that lets the herbs and garlic really shine. Grilled Chimichurri Chicken
INGREDIENTS
- 3 garlic cloves, peeled
- 1/4 cup red onion
- 1/3 cup red wine vinegar
- 2/3 cup Mazola Corn Oil
- Black pepper and salt to taste
- 1/2 cup fresh cilantro
- 1 1/2 cups fresh parsley
- 1 1/2 lbs boneless, skinless chicken breasts
INSTRUCTIONS
- In a food processor, combine garlic, onion, vinegar, oil and salt and pepper. Blend well.
- Add in cilantro and parsley and pulse a few times until leaves are finely minced but not pureed.
- Marinade chicken in 1/3 cup of the sauce for about 30 minutes (or at least 10 minutes).
- Grill for about 4 minutes on each side until chicken is cooked through and grill marks appear.
- Top chicken with the rest of the chimichurri sauce as desired.
