Healthy Greek Yogurt Blueberry Muffins
Healthy Greek Yogurt Blueberry Muffins are made lighter with whole-wheat flour, Greek yogurt, and are bursting with juicy blueberries! These muffins are so easy to make and are a perfect breakfast or snack.
Are you doing extra baking while being stuck at home? We have been doing a little bit of baking around here- banana bread, birthday cake, cookies and now blueberry muffins. My three year old Oliver made these muffins with me. I love making muffins because they are easy to make and can actually be a healthy treat! These Healthy Greek Yogurt Blueberry Muffins are very easy to make and mostly use pantry ingredients that you may already have on hand.
These Healthy Greek Yogurt Blueberry Muffins are not dry at all and are perfectly moist (sorry, they are!). I've made them with fresh and frozen blueberries and either will work just fine. I used plain Greek yogurt in this recipe but you could also use blueberry Greek yogurt if you want more blueberry flavor and a bit more sweetness. Or just lightly reduce the amount of honey/syrup you use if you use the sweetened yogurt. Vanilla would work as well.
I have to warn you, your family will love these. Like 16 of these disappeared in one morning. The kids ate them for breakfast and for snack time. I'm happy to have found a healthy snack that they enjoy so much and that aren't hard to make.

-Vanilla
-Butter
-Greek yogurt
-Baking powder
-Frozen blueberries- feel free to use fresh if you have them
You can make these blueberry muffins for a snack, for breakfast or even for a dessert. My kids absolutely love them! They will eat a few in a row if allowed. Perfect for people of all ages! I love to pair mine with a hot cup of coffee in the afternoon.
I baked these muffins in my favorite muffin cup tin from Chicago Metallic. Nothing sticks in these and the muffins come out beautifully. I also used Chicago Metallic silicone baking cups. For all of the muffins that I make, I cannot believe that I have never had these before. They make such a difference! I hate when some of my muffin is wasted by getting stuck to a paper muffin liner and these are amazing because nothing sticks to them.

Healthy Greek Yogurt Blueberry Muffins are made healthier with whole-wheat flour, Greek yogurt, and are bursting with juicy blueberries! These muffins are so easy to make and are a perfect breakfast or snack.
Prep Time: 10 minutes Cook time: 20-25 minutes Total time: 30-35 mins
INGREDIENTS
- 2 eggs
- 1/2 cup milk
- 1/2 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/4 cup butter, melted
- 1/2 cup plain Greek yogurt (or blueberry)
- 1 1/2 cups white whole-wheat flour
- 2 teaspoons baking powder
- 2 cups fresh or frozen blueberries
- Cinnamon Sugar Topping (optional)
- 1 1/2 tablespoons sugar
- 1 teaspoon cinnamon
- 1 tablespoon white whole-wheat flour
INSTRUCTIONS
- Preheat the oven to 375 degrees. In a large mixing bowl, whisk the eggs together with the eggs, milk, sweetener, vanilla, butter and Greek yogurt. Stir in the flour, baking powder and blueberries.
- Stir together cinnamon sugar topping if desired.
- Take a muffin tin and line it with silicone baking cups (paper will work too). Spray with nonstick spray if desired. With a spoon or a scoop, fill each muffin cup with batter.
- Sprinkle the tops with the cinnamon sugar mixture.
- Transfer the muffin tin to the oven and bake for 20-25 minutes until the muffins are cooked through.
