10-Minute Mexican Rice and Beans Skillet
10-Minute Mexican Rice and Beans Skillet is healthy, easy to make and uses many of the items that you may have at home. It is vegan, gluten-free and is all cooked in one skillet!
A pantry staple dinner recipe ready in just 10 minutes? Sign me up! I recently made this 10-Minute Mexican Rice and Beans Skillet and my kids and husband absolutely loved it. It is beyond easy to make but loaded with flavor as well. When you have brown rice already cooked, it comes together in no time.
What I'm hearing from you is that you want easy pantry staple meals at this time and I'm with you, I do too! Rice and beans are staples for sure so I created this recipe using almost everything from my pantry. Fresh peppers and onions help make it a complete meal. Naturally, this meal is vegan and gluten-free.
My favorite thing to do is make a huge batch of brown rice and then freeze it in Ziploc bags. It is so easy to defrost and leaves you with fresh tasting rice ready to eat. You could also use something like Minute Rice in this recipe if you like.

Despite using pantry staples for this beans and rice skillet, it is extremely nutritious! You get protein from the beans and rice. Tons of fiber from the beans, rice, peppers and onions. And lots of vitamin C from the peppers. If you want, you could add chicken, beef or pork for more protein but it certainly does not need it.Mexican Rice and Beans Substitutions
If you do not have black beans on hand, feel free to swap for pinto beans. If you do not have brown rice, feel free to use any kind of rice or quinoa. INGREDIENTS
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 yellow onion, diced
- 3 cups cooked brown rice
- 1 can no-salt added black beans, drained and rinsed
- 8 ounce can no-salt added tomato sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1-2 teaspoons chili powder
- 1 teaspoon cumin
INSTRUCTIONS
- In a pan, heat olive oil and saute peppers and onions for 3-5 minutes until soft.
- Add in rice, beans and tomato sauce.
- Season with spices and mix together well.
