Sheet Pan Buffalo Chicken and Ranch Vegetables
Sheet Pan Buffalo Chicken and Roasted Ranch Vegetables takes 5 minutes to prep, is all cooked on one sheet pan and is a healthy and delicious meal that the whole family will love!
I knew that I wanted to make a delicious and easy sheet pan recipe for my family but after looking at my list of sheet pan recipes that I was planning on making, I was feeling uninspired. I thought to myself, I want to make something that I haven't made before and something a little different. The idea of buffalo chicken sounded delicious and I decided to throw some veggies on there to make it a one pan meal. Then, I thought about how ranch and buffalo go together so well and came up with roasted ranch veggies. It turned out so delicious. Yep, this easy Sheet Pan Buffalo Chicken and Roasted Ranch Vegetables dinner is a winner!
With three kids and busy days, I almost always turn to meals that are quick to prepare. The thing is, I am not willing to sacrifice flavor or health when it comes to these meals. I want it to still taste delicious and I want it to be packed with nutrients for my family. Sheet pan meals are one of the very best ways to have a quick and easy meal that tastes great and is healthy.
You can use any vegetables that you want for this dish but I especially recommend potatoes, broccoli, zucchini, green beans, cauliflower and carrots. They all taste great with the ranch seasoning and pair well with the buffalo chicken.
I roasted this sheet pan dinner on my favorite Chicago Metallic Non-stick baking sheet. Nothing sticks to these awesome sheet pans. I can never get over how affordable that they are but that they truly work so well.
To make sure that the chicken breasts were fully cooked, I took the temperature of the chicken with the Taylor Folding Thermometer which is very convenient and folds up small in a drawer and is less than $10 on Amazon.

Ranch Roasted Vegetables
I kept it really simple and roasted my veggies in olive oil in the oven. When they are done roasting, I tossed them in a little ranch powder from a dressing packet. Super affordable and easy to toss on your roasted veggies. When you are roasting vegetables, don't be afraid to let them cook a little longer and get crispy. They taste so delicious that way! For the chicken, I just threw in on a sheet pan thinly sliced and tossed it with olive oil. Once it was fully cooked, I tossed it in buffalo sauce and cooked it a few minutes more so that the sauce would get baked on. So easy and tasty! Prep Time: 5 minutes Cook time: 25 minutes Total time: 30 mins
INGREDIENTS
- 1 pound boneless skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 2 red potatoes, diced
- 2 large carrots, diced
- 1 medium zucchini, sliced
- 1 cup green beans
- 1 head broccoli, chopped
- 3 tablespoons buffalo sauce (or 2 tablespoons Frank's hot sauce, 1 tablespoon butter)
- 1 tablespoon ranch seasoning mix
INSTRUCTIONS
- Preheat oven to 375 degrees.
- Chop vegetables and thinly slice chicken. Toss with oil on a baking sheet or two.
- Roast for 15 minutes. Remove from oven, flip vegetables and chicken.
- Toss chicken with buffalo sauce and cook for another 10 minutes until chicken is cooked through- check temperature with a thermometer- and vegetables are lightly crispy.
- Remove from oven and toss vegetables with ranch seasoning.
