Healthy Copycat Chicken Lettuce Wraps
Healthy Copycat Chicken Lettuce Wraps are a take on your favorite P.F. Chang's lettuce wraps, but made healthier with more veggies and less calories and sodium.
Troy and I finally tried P.F. Chang's for my 30th birthday a couple of months ago after hearing about it for years. Did the P.F. Chang's Chicken Lettuce Wraps live up to the hype? They sure did! In fact, we fell so in love with them that we went back to have them again a month later which is just unheard of for us- we don't go out to eat often and when we do, it typically is not to the same restaurant.
Troy and I both got it in our heads that we wanted to make copycat chicken lettuce wraps at home. I got busy in the kitchen and made these Healthy Copycat Chicken Lettuce Wraps and am so excited that we can get one of our favorite restaurant dishes right at home!
I am newer to cooking with Mirin. It is typically used in Japanese cooking and has flavors that are sour, sweet and bitter. It can be used in dipping sauces, ramen and more. Does anyone else love these lettuce wraps? They are just so yummy! I love all of the Asian flavors in the sauce and the crunch of the fresh lettuce. You can eat these as an appetizer or have them for a whole meal. We have them for a meal and have a side of veggies or rice with them. If you want to make the wraps a little more filling, feel free to add a little brown rice to each lettuce wrap.
My kids gobbled these right up. My husband who loves chicken lettuce wraps as much as I do gave the biggest compliment saying that he liked them even more than the P.F. Chang's ones! Next time, I would add even more veggies since we are a veggie loving family.

How to make chicken lettuce wraps healthy
To make these lettuce wraps healthier, I did not add salt outside of the sauces that I used which contain sodium. I used a low-sodium soy sauce and used less oils then they would in a restaurant. I also added more water chestnuts, green onion and added in a red bell pepper and shredded carrot for more nutrients with not a lot of calories. I also chose to use boneless, skinless chicken breasts since I love the texture of a chicken breast more than ground chicken and compared to a higher fat ground chicken, this chicken has less fat.Healthy Copycat Chicken Lettuce Wraps

Healthy Copycat Chicken Lettuce Wraps
Healthy Copycat Chicken Lettuce Wraps are a take on your favorite P.F. Chang's lettuce wraps but made healthier with more veggies and less calories and sodium.
Prep Time: 10 minutes Cook time: 15 minutes Total time: 25 minutes
INGREDIENTS
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- 2 teaspoons minced garlic
- 1/4 cup diced onion
- 1 red bell pepper, diced
- 1 large carrot, shredded
- 1 tablespoon Mizkan Mirin
- 1/4 cup hoisin sauce
- 2 tablespoons low sodium soy sauce
- 1 1/2 tablespoons Mizkan Natural Rice Vinegar
- 2 teaspoons minced fresh ginger
- 1 teaspoon black pepper
- 8 ounce can of water chestnuts, diced
- 3 green onions, diced
- Butter lettuce, romaine or iceberg lettuce
INSTRUCTIONS
- Slice chicken breasts thinly across so that they are about half an inch thick. Heat olive oil in a pan and cook chicken breasts through until lightly browned. Remove from heat and finely dice.
- Add onion, garlic, red pepper and carrot to pan and cook for about 3 minutes until peppers are lightly cooked through. Add in Mizkan Mirin, hoisin, soy sauce, Mizkan Natural Rice Vinegar, black pepper and ginger and cook for about 2 more minutes. Add the chicken, green onion and water chestnuts in and mix all together.
- To make a lettuce wrap, take a large spoonful of chicken mixture and place it into a lettuce "cup" and enjoy!
