Peppermint Chocolate Chip Skillet Cookie
Peppermint Chocolate Chip Skillet Cookie is rich, chewy and full of melted chocolate chips and crushed peppermint for a delicious dessert!
With the holidays almost here, baking is definitely on our minds. The weather is cold and it is so much fun to get baking in the kitchen. Not only does it warm up the house, but it is also fun and everyone loves a delicious homemade baked good.
I've always wanted to make a skillet cookie and finally made one! This Peppermint Chocolate Chip Skillet Cookie is so easy to make and delicious. Perfect for the holidays, this Peppermint Chocolate Chip Skillet Cookie is amazing for a small gathering where everyone can have a slice!
When it comes to entertaining, we especially love to host around the holiday season. It is fun to have some ideas of easy appetizers, dinners and desserts on hand, so that when a holiday gathering comes up, you know what you can make quickly that everyone will love.
These skillet cookies can be prepped ahead of time and baked during your gathering (or ahead of time if that works better). It will make your home smell amazing and is best served warm. Though no one would turn it down cold or room temperature either!
If you don't want these skillet cookies to be peppermint, just leave the peppermint out of it and you would still have a yummy Chocolate Chip Skillet Cookie. To make this skillet cookie a tiny bit more nutritious, I used white whole wheat flour instead of regular flour for more fiber. Rich and chocolaty, everyone is sure to love this peppermint chocolate chip skillet cookie.
Also, instead of sugar, I used Truvia Cane Sugar Blend from Meijer. Obviously cookies have a lot of sugar, so I wanted to challenge myself to make a baked good with less sugar and it turned out so delicious.
These blends are really easy to use in baking recipes, taste good, and have 75% fewer calories than sugar. Truvia bakes and browns like sugar and gets its sweetness from the Stevia leaf.
For this recipe, I used the Truvia Cane Sugar blend and molasses, but you could also use the Truvia® Brown Sugar Blend instead.

Peppermint Chocolate Chip Skillet Cookie
Peppermint Chocolate Chip Skillet Cookie is rich, chewy and full of melted chocolate chips and crushed peppermint for a delicious dessert! Made with whole-wheat flour and Truvia.

INGREDIENTS
- 1/2 cup butter, melted
- 1/4 cup + 2 tablespoons Truvia® Cane Sugar Blend
- 1 tablespoon molasses
- 3 large eggs
- 1 1/2 teaspoons vanilla
- 1 cup white whole-wheat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup chocolate chips
- 1/4 cup peppermints, crushed
INSTRUCTIONS
- Preheat oven to 350 degrees and spray a cast iron skillet with nonstick spray.
- In a bowl, mix together butter, Truvia Cane Sugar Blend, egg and vanilla until well mixed.
- Stir in flour, baking soda and salt. Batter will be thinner than regular cookie dough and a little bit more like cake batter.
- Mix in chocolate chips and peppermint. Pour batter into skillet.
- Bake for 15-20 minutes until edges are lightly browned and cookie is cooked through.
