Sheet Pan Chicken Nachos
Sheet Pan Chicken Nachos are super loaded with chicken, lots of veggies, melted cheddar cheese, salsa, plain Greek yogurt and more for a healthier take on your favorite nachos!
If you follow me on Instagram stories, you know that I have a nacho addiction. I share all the time how I have different veggie loaded nachos for snacks or meals. The most common meal that I make for my family is loaded nachos and today, I want to share our Sheet Pan Chicken Nacho recipe with you. It is so easy to make and actually quite healthy.

The most common meal that I make for my family is loaded nachos and today, I want to share our Sheet Pan Chicken Nacho recipe with you. It is so easy to make and actually quite healthy.
Sheet Pan Chicken Nachos are healthier than your typical nachos. I used lean roasted chicken breasts for protein. I use pinto beans for fiber and protein. Instead of sour cream, I always recommend using nonfat plain Greek yogurt as a super easy swap.
How I make this a complete meal for my family on one sheet pan is by LOADING these nachos with tons of veggies. I'm talking my entire large cutting board is loaded with a big variety of vegetables. Please feel free to use what you have on hand including tomatoes, peppers, green onion, zucchini, summer squash, broccoli, corn, or anything really. The sky is the limit. I just finely dice a ton of veggies that we have and toss them on there and my kids, husband and I gobble these right up.
First, I toss the chicken breasts in some spices and roast them on a sheet pan. I remove them from the oven and then dice into small pieces. Just wipe off that same sheet pan that you cooked the chicken on and load with your favorite tortilla chips. Top with the veggies, chicken, shredded cheese and salsa. Broil in the oven until the cheese is melted and if you like, slightly browned. Top with green onion, jalapenos if you wish and plain Greek yogurt.
The kids like enjoying their loaded chicken nachos off of a plate while Troy and I just share the rest of the pan together. It is a really fun meal that is very customizable and oh so tasty. You can serve these sheet pan chicken nachos as a meal or as an appetizer. Whatever you prefer!
For this recipe, I took the temperature of the chicken to make sure it was done with the Taylor Folding Thermometer which is very convenient and folds up small in a drawer and is less than $10 on Amazon. The chicken and nachos were cooked on a Chicago Metallic Non-Stick Baking Sheet. I've had Chicago Metallic baking sheets for 10 years and they are still working amazing! Highly recommend.
I served these nachos on Mikasa Abbey dinnerware which are so pretty. For the most part, I prefer white dinnerware so the food can really stand out and this set is so beautiful! It has a fun embossed basketweave design to make it not your ordinary plain white dishes. They are fancy enough to be used as china but simple enough to be used as everyday dishware too.

Sheet Pan Chicken Nachos

Prep Time: 10 minutes Cook time: 25 minutes Total time: 35 mins
INGREDIENTS
- 1/2 pound boneless, skinless chicken breasts
- 2 teaspoons olive oil
- 1 teaspoon garlic powder
- About 2 cups of tortilla chips
- 1/2 cup shredded cheddar cheese
- 1/2 green bell pepper, finely chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup corn (frozen or cooked fresh)
- 1/2 cup low-sodium pinto beans, drained and rinsed
- Salsa
- 1/2 cup cherry tomatoes, finely chopped
- 1/3 cup plain Greek yogurt
- Diced green onion
INSTRUCTIONS
- Preheat oven to 350 degrees. Toss chicken breasts in olive oil and spices and bake in oven on a sheet pan for 15-20 minutes until the internal temperature of chicken reads 165 degrees F on a thermometer and chicken is cooked through. Finely dice chicken breasts.
- Rinse sheet pan and dry. Spread tortilla chips all over sheet pan. Top with chicken, peppers, onion, corn, salsa and beans.
- Turn broiler on high and broil nachos for about 5 minutes or until cheese is melted- watch carefully so that nachos do not burn.
- Top with tomatoes, Greek yogurt and green onion and serve immediately.
