3-Ingredient Peanut Butter Banana Muffins are made with whole-grain pancake mix and have no-added sugar! They make a perfect breakfast or snack and are totally kid-friendly.
I love the brand Kodiak Cakes and have been making muffins using Kodiak Cakes pancake mix weekly and wanted to share our favorite one so far. This recipe for these healthy whole-grain muffins is so, so easy and my kids love it. 3-Ingredient Peanut Butter Banana Muffins contain just bananas, peanut butter and Kodiak Cakes pancake mix.
When Adalyn gets home from school, she is starving and I can't get her snacks fast enough. No joke, she wants 4 different snacks each day before dinner. I wanted a snack that fills her up but it nutritious too so I took some time to brainstorm and came up with making nutrient-packed whole-grain muffins.
Each Sunday, I whip up a batch of muffins. Last week, I made fig cashew butter muffins and this week, I made peanut butter banana muffins. I just toss all of the ingredients in the blender and blend until smooth. It is so easy and super tasty. Since these muffins have no-added sugar, I do top them with a bit of nut butter for flavor. They would also be great with a sprinkle of cinnamon sugar on top for a bit more sweetness.

Yield: 18 muffins
3-Ingredient Peanut Butter Banana Muffins
3-Ingredient Peanut Butter Banana Muffins are made with whole-grain pancake mix and have no-added sugar! They make a perfect breakfast or snack and are totally kid-friendly.
Prep Time: 10 minutes Cook time: 20 minutes Total time: 30 mins
INGREDIENTS
- 3 cups Kodiak Cakes flapjacks and waffle mix
- 2 cups water
- 3 bananas
- 1/2 cup peanut butter
- Optional: toppings such as chia seeds, cinnamon sugar or chocolate chips
INSTRUCTIONS
- Preheat oven to 400 degrees. Take a muffin tin and fill with muffin liners. Spray liners with nonstick spray.
- In a blender, blend together all ingredients until smooth. Scoop out mix into muffin tins to make 18 muffins.
- Bake for 20 minutes or until when you insert a toothpick into muffin, it comes out clean.
