Sheet Pan Chicken and Rainbow Vegetables
Sheet Pan Chicken and Rainbow Vegetables is a healthy meal ready in just 30 minutes all on a sheet pan that is loaded with a rainbow of veggies and seasoned roasted chicken.
Life has been busy and this delicious Sheet Pan Chicken and Rainbow Vegetables meal is perfect! You just toss a variety of veggies and chicken on a sheet pan, add seasonings and oil and roast in the oven until dinner is done. My whole family loved it and I will definitely be making it with all different veggies and different seasoning blends all year long!
I don't think that I was quite prepared for how busy this back-to-school season would be. I recently had my first week solo parenting three kids during the day while Troy went back to work as a teacher and let me tell you, it was very busy. There is just so much to do with a newborn baby and two other kids and it's going to take some getting used to. I loved having my husband's help for 1 1/2 months this summer! Also, I work from home full-time without any childcare help and it can be quite difficult to find time to work as I'd like to.
What I'm trying to say is that a lot of times, I don't have a lot of time to prepare meals which is when this awesome easy sheet pan dinner comes in handy. It doesn't require a lot of prep time or hands on time which I love. I can prep the meal really quickly and throw it into the oven to cook while I get other things done.
If I'm feeding the baby, helping the other kids do something or if I'm working, I know that a delicious dinner will be ready soon without having to spend a lot of time on it. For the rainbow vegetables, feel free to use a variety of whatever brightly colored vegetables that you have on hand and enjoy.

How to Make Sheet Pan Chicken and Rainbow Vegetables
I used the new McCormick® ONE Sheet Pan Farmer's Market Chicken and Vegetables seasoning which was really tasty on this meal. Instead of pulling out several spices from my spice cabinet and having to think of which ones would go well together, I just grabbed this spice blend from Meijer and tossed it on the chicken and veggies.

Sheet Pan Chicken and Rainbow Vegetables is a healthy meal ready in just 30 minutes all on a sheet pan that is loaded with a rainbow of veggies and seasoned roasted chicken!
Prep Time: 5 minutes Cook time: 25 minutes Total time: 30 mins
INGREDIENTS
- 1 pound boneless skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 6 cups chopped rainbow vegetables (tomatoes, carrots, bell peppers, zucchini, summer squash, eggplant, red onion, etc.)
- McCormick® ONE Sheet Pan Farmer's Market Chicken and Vegetables seasoning mix
INSTRUCTIONS
- Preheat oven to 400 degrees.
- Chop vegetables and thinly slice chicken. Toss with oil and seasoning mix on a sheet pan.
- Roast for 15 minutes. Remove from oven, flip vegetables and chicken and cook for another 10 minutes until chicken is cooked through.
