A couple months ago, I made a bunch of grilled pork loin and we had it for dinner one night. The next day, I asked Troy if he could put together dinner with the leftover pork loin. He absolutely blew my mind with a homemade BBQ sauce that was the best BBQ sauce that I had ever had. He made it again for this pulled pork nachos and let me tell you, you're in luck with a winner of a recipe!!

Troy actually came up with this recipe himself earlier this year when we had leftover pork another time. I couldn't believe that he thought to use apples on nachos but was totally blown away with the idea. The nachos are different than your typical nachos with shredded BBQ pork, shredded cheese, sauteed vegetables and apples but they are completely delicious. I prefer to make the pork ahead of time for this dish and with the leftover pork, make these nachos. I love to make a large amount of shredded pork to eat with different meals through the week.

This is the perfect quick meal that is filling and tasty. While chips for dinner are not something that I would recommend every night, they are loaded with lean, protein packed shredded pork and lots of veggies so they are really quite a nutritious choice. Plus, the kids love them!

It is not spicy because the kids do not like spice yet but feel free to add in some cayenne, red pepper flakes or chipotle if you like your food spicier. Also, feel free to use whatever veggies you have on hand. I definitely recommend corn, bell peppers and onions. Zucchini, avocado and tomatoes would also be great!

BBQ Pork Nachos with Peppers, Onions and Apples

BBQ Pork Nachos are loaded with shredded pork, melted cheese, sauteed corn, bell peppers and onions and crunchy apples with a homemade drizzled smoky barbecue sauce.
Prep Time:  10 minutes Cook time: 15 minutesTotal time: 25 mins

INGREDIENTS

  • 1 1/2 pounds pork loin filet, trimmed
  • 1 tablespoon olive oil
  • 1 green pepper, finely diced
  • 1 onion, finely diced
  • 1 summer squash, diced
  • 1 ear of corn, cut off cob (or 1 cup frozen corn)
  • 1 bag tortilla chips
  • 1 cup shredded cheese
  • 1 apple, chopped
  • Smoky BBQ Sauce
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder

INSTRUCTIONS

  1. Ahead of time: Trim pork and cut into 1 inch slices. Cook in slow cooker for about 6 hours or until meat falls apart when stirred with a fork or spoon.
  2. When pork is cooked, heat olive oil in a pan. Add in green pepper, onion , summer squash and corn and cook for about 4-5 minutes until vegetables are soft.
  3. Over medium heat in a small pot, simmer ingredients for BBQ sauce for a few minutes.
  4. On sheet pan, spread out tortilla chips. Top with veggies, shredded pork and shredded cheese. Drizzle with BBQ sauce.
  5.  Broil in oven for about 3-4 minutes until cheese is melted. Top with apples.
