Key Lime Greek Yogurt Cheesecake
Key Lime Greek Yogurt Cheesecake is rich and creamy and full of tangy lime flavor! Made healthier with Greek yogurt, less sugar and whole-wheat flour!
I can't stop making Greek yogurt cheesecake! I think that cheesecake is one of the best desserts ever and being able to make it healthier with the addition of Greek yogurt is just too amazing. Key lime pie and key lime flavored desserts are one of my very favorite flavors so I decided to make a key lime Greek yogurt cheesecake. It turned out awesome just like my other cheesecakes and I can't wait to share the recipe with you.
A couple of years ago, I was so scared to try to make a cheesecake. I thought that it would be really hard to make and that a healthier cheesecake wouldn't taste good. I was so wrong! I started making my own cheesecakes and haven't looked back. My mother-in-law is an expert cheesecake maker and kept telling me that they were really easy to make and she was right!
To make this cheesecake a little healthier, I used 2% milk plain Greek yogurt. You wouldn't believe how delicious this cheesecake tastes with it! I've had many family and friends try cheesecake with Greek yogurt in it and they have not been able to tell the difference compared to regular cheesecake. I also use neufchatel cream cheese which tastes just like cream cheese but is a little lighter. You can find it in any grocery store right next to the regular cream cheese.
To make this like a real key lime pie, I made a graham cracker crust. Just buy graham crackers and grind them in a food processor or blended and you will have graham crumbs ready to go in a minute. I like key lime pie and key lime desserts to be tangy so I used a lot of lime juice in this recipe. I hope you enjoy!
I baked this cheesecake in the Chicago Metallic Professional Non-stick Split Decision Pie Pan. It is the coolest pie pan because the bottom of it is removable making it super easy to take your pie (or cheesecake) out easily. It literally lifts right out without any issues. The non-stick qualities of the pan made it so that my cheesecake didn't stick at all which is great. The split decision part is a removable divider which makes it so that you can make 2 different kinds of pies if you want. You can also remove it like I did in this case and make just 1 kind. I think that it would be really fun to make 2 kinds of pies for a small event.
I've been a big fan of Chicago Metallic products for 10 years. My items that are 10 years old are still in great condition and the non-stick still works well after many, many uses. The brand is affordable which is crazy because they are such great quality. I highly recommend them!

Key Lime Greek Yogurt Cheesecake

Key Lime Greek Yogurt Cheesecake
Key Lime Greek Yogurt Cheesecake is rich and creamy and full of tangy lime flavor! Made healthier with Greek yogurt, less sugar and whole-wheat flour!
Prep Time: 15 minutes Cook time: 55 minutes Total time: 65 mins plus cooling time
INGREDIENTS
- 1 1/2 cups graham crumbs (about 8 graham crackers)
- 3 tablespoons butter
- 1 1/2 cups 2% milk plain Greek yogurt, room temperature
- 2-8 ounce packages neufchatel cream cheese, room temperature
- 1/2 cup sugar
- 3 eggs, room temperature
- 1/4 cup white whole-wheat flour
- 1/4 cup lime juice
- Zest of 2 limes
- Optional: lime slices and more graham crumbs to decorate cheesecake
INSTRUCTIONS
- Preheat oven to 350 degrees. Blend graham crackers into crumbs in your food processor. Add in the melted butter and continue to mix.
- Dump the graham mixture into your pie pan and press down firmly all around the pie pan. Bake for 10 minutes and then remove pie pan from oven.
- Meanwhile, start to prepare the filling. In a food processor, blend all ingredients for cheesecake until very smooth. Take a spatula and scrape the sides to ensure that everything is blended.
- Spread cheesecake mixture into pie pan and smooth the top with a spatula.
- Bake for 45-50 minutes until 2-3 inches of the cheesecake in the center are slightly jiggly like jello but the rest is firm.
- Remove from oven and let cool 2 hours. Refrigerate to completely cool after 2 hours.
