With the upcoming season change comes different produce that is available. We start seeing less tomatoes and peaches and more apples, sweet potatoes, Brussels sprouts, pears and more. I love all kinds of produce so it is fun to be able to eat the best produce at its peak freshness. As I was excited for fall foods, I decided to combine a bunch of them in this delicious skillet recipe for dijon pork chops with sweet potatoes, apples and Brussels sprouts. These pork chops are easy to work with and tasted so good with the creamy dijon sauce. They are perfect for this busy back to school season where we don't always have a lot of time to make dinner. We have been loving to use Dijon mustard in a variety of recipes because it has a creaminess about it without actually having any cream in it. Troy has been whipping up the most delicious salad dressings with Dijon mustard that the whole family loves so I knew that a creamy Dijon mustard sauce would be a hit as well! I mixed together Greek yogurt, Dijon mustard, black pepper, vinegar and onion powder for the sauce. I wanted it to be creamy but on the healthy side with the Greek yogurt.
The combination of sweet potatoes, apples and Brussels sprouts tastes delicious together. They go really well with the sauce and the Boneless Smoked Pork Chops. I used Fuji apples in this recipe because that is what I had on hand but honeycrisp or any other kind of apple would work too.
This meal is filling and an all-in-one dish so you don't have to dirty too many pans or make a couple different dishes. I got all of these ingredients at my local Kroger which I love because I can walk there with my stroller and stock up on the items that I need.
My kids were all about this meal because they love Dijon mustard and they thought it was cool that there are apples in this recipe. Before you think your kids won't like it, have them give it a try!

INGREDIENTS
- 2 medium sweet potatoes, microwaved until partially soft
- 1 1/2 cups Brussels sprouts, trimmed and halved
- 1 large apple, sliced
- 1 tablespoon olive oil
- 1 pound Smithfield Anytime Favorites Boneless Smoked Pork Chops
- 1/2 cup whole-milk Greek yogurt
- 3 tablespoons Dijon mustard
- 1 tablespoon red wine vinegar
- 1/2 teaspoon black pepper
- 1 teaspoon onion powder
- Optional: spinach, fresh dill
INSTRUCTIONS
- Dice sweet potatoes into bite sized pieces. In a skillet, heat olive oil and add in sweet potatoes, Brussels sprouts and apples. Saute for 5 minutes on medium heat.
- Meanwhile, in another skillet, brown pork chops for 2-3 minutes on each side (they are fully cooked but taste delicious when browned on each side).
- In a bowl, whisk together Greek yogurt, mustard, vinegar, pepper and onion powder.
- Combine the pork chops with vegetables into one of the skillets and stir in creamy Dijon sauce for about 1 minute until sauce is warmed.
- If desired, stir in fresh baby spinach and fresh dill.
