Pear BBQ Chicken Pizza
Pear BBQ Chicken Pizza features a thin crispy pizza crust topped with sweet and smoky barbecue sauce, shredded chicken, red onion, sliced pear, green pepper and melted cheese!
Summer outdoor concerts have kind of become "our thing" as a family. Every Wednesday night of the summer, we would meetup at our favorite park and listen to music outdoors. We all came to love it! The kids love running around and dancing. And we always have the most delicious food.
My family likes to collaborate on meals where we would each bring something. Between my mom, sister and I, we would have a fantastic meal. We all love to cook and it was fun to come up with all different meals all season long. For our last concert, I wanted to create a delicious pizza that the family would love. We all like BBQ chicken pizza so I went with that idea.
I topped the Pear BBQ Chicken Pizza with shredded BBQ chicken, sliced USA Pears, red onion, a little green pepper, BBQ sauce and melted "pizza blend" cheese. I chose a thin crust but feel free to use whatever kind you like. I also like buying naan bread to use as pizza crust. For the chicken, I just boiled min and then shredded it with a fork. You could also cook yours in a slow cooker or buy a fully cooked rotisserie chicken.
I love cooking with pears this time of year because they are in season and perfectly sweet and juicy. I like my pears firm but ripened to yellow. I love pears because not only do they taste great, they also are one of the highest fiber fruits.
Most Americans diets are lacking in fiber so I love getting my family a fiber boost when I can. A medium pear has about 100 calories and 6 grams of fiber! Also, don't peel that delicious skin! That is where some of the fiber and a lot of the vitamins are.
There are so many different varieties of pears. We buy all of the different kinds that we can find at our grocery store through the year. I love exposing my kids to all different kinds of produce and we have a lot of fun trying the different pears. For this recipe, I used bartlett pears. Seckel pears are another one of my favorite kinds. Check out this awesome list to learn about the different varieties of pears.

This summer, we went to SO many outdoor concerts! No joke, by 7 weeks old, Lily made it to 12 concerts. I made this Pear BBQ Chicken Pizza for my family for our last concert of the season and two whole pizzas quickly disappeared. Everyone including the kids enjoyed it and I am excited to share the recipe with you.
