Rainbow Veggie Pinwheels
Rainbow Veggie Pinwheels are loaded with vegetable cream cheese, peppers, tomatoes, cucumber, red onion, carrots and kimchi on a whole-grain wrap. Perfect for entertaining, an easy appetizer or lunch!
The word rainbow in a recipe gets me every time! I love making healthy rainbow recipes using a variety of fruit and vegetables. I'm not talking about dyed rainbow desserts but naturally rainbow foods that are nutritious and delicious! These Rainbow Veggie Pinwheels are totally perfect for an appetizer, lunch or even a snack. They take 5 minutes to make and taste so delicious!
You're going to think that I'm crazy but I've never actually made pinwheels myself until now. For all of the cooking that I do, this is kind of nuts! My sister has made them and I loved them. I have eaten them at baby showers, birthday parties, wedding showers and more. I absolutely love them because they are so pretty, taste delicious and have an awesome chewy texture. It was time that I finally made some myself.
Honestly, you can choose whatever rainbow vegetables that you want to use in these pinwheels. I used what I had on hand which was red bell peppers, cucumber, yellow tomatoes, shredded carrots and purple onions. I also added kimchi which is pickled cabbage for a boost of flavor. I tried it with the kimchi and without and definitely preferred it with it. I chose a vegetables of each color and went from there. I think that red tomatoes, purple cabbage, yellow peppers, broccoli and more would be great on there as well.
I went with a prepared veggie cream cheese for the "sauce" that holds everything together. I think that a ranch dip would also work well or another kind of cream cheese. I chose a whole-grain wrap that I found at my store. Choose something pliable that will roll well and won't rip.

Rainbow Veggie Pinwheels
Rainbow Veggie Pinwheels are loaded with vegetable cream cheese, peppers, tomatoes, onion, carrots and more on a whole-grain wrap. Perfect for entertaining, an easy appetizer or lunch!

INGREDIENTS
- 4 large whole-grain wraps or tortillas
- 1/2 cup vegetable cream cheese
- 1/2 cup diced red pepper
- 1/2 cup shredded carrot
- 1/2 cup diced yellow tomatoes
- 1/2 cup diced cucumber
- 1/3 cup diced red onion
- 1/2 cup kimchi
- 1 teaspoon black pepper
INSTRUCTIONS
- With a butter knife, spread cream cheese over the entire wrap.
- On each wrap, lay out each color of vegetable in rows. Sprinkle on black pepper
- Roll wraps tightly and cut across into pinwheels.
