Pancakes on the weekend are a total treat! They really aren’t that hard to make though so I’m not sure why we wait until the weekends to make delicious pancakes. You know that I love throwing Greek yogurt into everything that I make to add a boost of protein and some calcium and these pancakes are no different. I made these blueberry Greek yogurt pancakes for the family one day and they were such a hit. Fluffy, moist and literally bursting with blueberries. Try these Whole-Grain Peaches and Cream Pancakes.
I used white whole-wheat flour for extra protein, fiber and vitamins. The Greek yogurt and eggs make these pancakes higher in protein which helps keep you full for longer. I’m not a fan of eating a big breakfast and feeling hungry a bit later. These pancakes kept me full for hours.
Blueberry Greek Yogurt Pancakes Ingredients
I used frozen blueberries for these blueberry pancakes and they turned out great. You can feel free to use fresh berries if you prefer. I also used a mashed banana in place of sugar for sweetness. The batter takes just a few minutes to throw together and they take just several minutes to cook so they really aren’t too difficult.
How to Make Blueberry Greek Yogurt Pancakes
When Adalyn got up from her nap to the smell of blueberry pancakes, she was in heaven! These pancakes can be made ahead of time and reheated. The batter is kind of thick so when you scoop the batter onto your pan or griddle, take your spoon and flatten it out a bit so it cooks quicker. They will still be fluffy but that way, they won’t burn on the outside and be raw on the inside. Blueberry Greek Yogurt Pancakes
Blueberry Greek Yogurt Pancakes are fluffy, whole-grain, rich in protein and fiber and are bursting with juicy blueberries for a delicious breakfast!
Prep Time: 5 minutes Cook time: 10 minutes Total time: 15 mins
INGREDIENTS
- 1 cup blueberry Greek yogurt
- 1 large ripe banana, mashed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup white whole-wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup milk
- 1 cup frozen blueberries
INSTRUCTIONS
- Mix together all ingredients well in a glass mixing bowl.
- Heat a griddle or nonstick pan and spray with nonstick spray.
- Spoon 1/4 cup batter onto pan at a time and lightly flatten with spoon or measuring cup if batter is super fluffy so that pancakes cook evenly.
- Cook on one side until bubbles form on uncooked side and then flip and cook until pancake is cooked through.
