Berry Peach Muffins

Berry Peach Muffins
My kids and I love muffins and I am always trying to come up with new flavors to try for fun! I like to make my muffins whole-grain, low in sugar, high in fiber and like them having some protein if possible. That way, when the kids want to eat 2-3 of them, I don't have to worry that they are having a giant sugar bomb of a snack. I came up with these berry peach muffins that are super delicious, easy to make and nutritious as well! I got my ingredients from Meijer and am sharing information on their Free Prescription Drug Program.

Blackberry Peach Muffins
For these berry peach muffins, I used frozen fruit but feel free to use fresh if that is what you have on hand. I used a mix of peaches, blackberries and blueberries. Feel free to switch up the kinds of fruit that you use. Just stick to the 2 cup amount of fruit and you should be fine. I used 100% white whole-wheat flour as I do in most of my recipes for extra nutrients and fiber. I lowered the sugar compared to typical muffins to make a healthy breakfast or snack for the kids and I.

I made these muffins before baby #3 being born, doubled the batch and froze a bunch of them for easy snacks when I am feeding baby. They freeze well and are great to make a huge batch of and freeze for a later date.

Berry Peach Muffins

Berry Peach Muffins are whole-grain, have less sugar, are packed full of juicy peaches, blueberries and blackberries and make an awesome snack or breakfast!
Prep Time:  10 minutes Cook time: 20 minutes Total time: 30 mins

INGREDIENTS

  • 1 1/2 cups white whole-wheat flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk
  • 1 egg
  • 1 1/2 cups chopped peaches, blackberries and blueberries (fresh or frozen)
  • 2 teaspoons lemon juice

INSTRUCTIONS

  1. Preheat oven to 400 degrees.
  2. Mix all ingredients together well in a large bowl.
  3. Spray muffin liners with nonstick spray and fill each cup with mixture.
  4. Bake for 20 minutes until when you insert a toothpick into muffin, it comes out clean.
