Berry French Toast Casserole
Berry French Toast Casserole only requires 5 minutes of prep time, is perfect for any breakfast or brunch and is healthy with antioxidant rich berries and whole-grain bread!
I recently whipped up this Berry French Toast Casserole in about 5 minutes before tossing it in the oven for an easy breakfast that I knew that my kids would love and wanted to share! The ingredients are so simple that you probably have almost all of them on hand at your house and if not, they are super affordable.
This French toast casserole works really well for meal prep or to serve for a brunch. I used a mixture of frozen cherries, blueberries and blackberries but feel free to use any berry mixture. Alternatively, you could also do peaches, apples, bananas, etc. and switch up the French toast casserole flavor.

Berry French Toast Casserole Nutrition
Despite being a French toast bake, it is actually very nutritious! I used whole-grain bread, 2% milk and eggs. Along with antioxidant rich berries, this meal is quite healthy. If you want to make it even lower in sugar, you can top the Berry French Toast Casserole with drizzly peanut butter instead of syrup which in my opinion, tastes the best!Berry French Toast Casserole

Prep Time: 5 minutes Cook time: 30 minutes Total time: 35 mins
INGREDIENTS
- 9 slices whole-grain bread, cut into 1-inch cubes
- 1 teaspoon cinnamon
- 3/4 cup milk
- 3 eggs
- 2 tablespoons maple syrup
- 1 cup frozen berries
INSTRUCTIONS
- Preheat oven to 350 degrees.
- Whisk together milk, eggs, syrup and cinnamon.
- Toss cubes of bread with egg mixture and mix well.
- Spray a baking pan with nonstick spray and dump mixture into pan. Top with frozen berries
- Bake for 30 minutes until egg mixture is fully cooked.
