Healthier Sausage, Red Beans and Rice
Healthier Sausage, Red Beans and Rice is a healthier take on the tradition dish and is loaded with spicy Cajun flavor, spicy andouille sausage, sautéed bell peppers, garlic and onions, brown rice and red beans for a healthy and hearty meal!
I recently created this healthier sausage, red beans and rice recipe for my husband's lunches for the week. I didn't plan to share it on the blog at all but then I tried a bite and oh my goodness, it is so good! I didn't plan to eat any myself since it was for Troy's lunch but after trying it, plans changed.
Unless your kids are okay with spicy, this dish probably isn't for the kids. 98% of the time, our kids eat exactly what we eat for any meal but with this one, I actually had to serve them something else because it is decently spicy.
If I had celery on hand, I would have also added that. If you don't like spicy foods, skip the spicy andouille sausage and use a regular turkey sausage instead. You could also sub pinto beans for the red beans. I have also made this dish using a bean-based rice product and loved that too. Feel free to use any color of bell peppers that you have as well.

This is one of the healthiest red beans and rice recipes that I can think of. I used brown rice, lean sausage and onions, garlic and bell peppers for extra nutrition. It is loaded with protein from the sausage and beans and is loaded with flavor. Healthier Sausage, Red Beans and Rice Ingredients
- Brown rice
- Olive oil
- Andouille sausage (or you can use any sausage)
- Onion
- Bell peppers
- Garlic
- Cajun seasoning
- Tomato sauce
- Red beans
How to Make Sausage, Red Beans and Rice
First, you're going to cook your rice. Then heat the olive oil in a skillet and sauté your sausage, onions and peppers. Add in the seasonings including the cajun seasoning, garlic, tomato sauce and the red beans. Cook for a few minutes more. Then, add in the brown rice and serve.

Prep Time: 5 minutes Cook time: 25 minutes Total time: 30 mins
INGREDIENTS
- 2 cups brown rice
- 1 teaspoon olive oil
- 12-14 ounce package of andouille sausage
- 1/2 large onion, diced
- 2 bell peppers, diced
- 4 cloves garlic, minced
- 2 tablespoons cajun seasoning
- 1 cup tomato sauce
- 1 can red beans, rinsed and drained
INSTRUCTIONS
- Cook brown rice according to directions- quick cook brown rice saves time.
- Heat olive oil in a skillet. Cut sausage into bite-sized coins, dice onion and peppers. Add to skillet and saute for about 5 minutes until vegetables and sausage are browned.
- Add in garlic, cajun seasoning, tomato sauce and red beans. Saute for a few minutes more.
- Mix in brown rice and serve.
