Grilled BBQ Chicken Salad
Grilled BBQ Chicken Salad is ready in just 15 minutes and is loaded with barbecue grilled chicken, grilled corn, black beans, fresh tomatoes and bell peppers and a BBQ ranch dressing!
The grill is in full use this year already and I'm loving it! One of my favorite flavors in the world is grilled chicken so I thought that I would make a Grilled BBQ Chicken Salad with corn, black beans, tomatoes and peppers for my family for dinner one night. It comes together quickly and is super flavorful and family friendly!
The kids loved this Grilled BBQ Chicken Salad and it is totally going to be a staple in our house all summer long. We will probably switch up a couple of ingredients here and there because I'm always trying new recipes but the basis of this salad will stay the same. Grilled chicken, beans, veggies, etc. Lots of flavorful and nutritious toppings that make this a complete meal that is ready in 15 minutes or so.
For the grilled barbecue chicken salad, I knew that black beans, corn, the BBQ chicken, tomatoes and bell peppers would go together so well. You can feel free to use either fresh corn or frozen corn for this recipe. If you happen to have corn on the cob on hand, throw some on the grill while your chicken is cooking and slice it off the cob for a delicious grilled corn flavor.
For the dressing, I decided that we needed even more barbecue sauce and mixed together a light ranch dressing and Hunt’s Cherry Chipotle BBQ Sauce. This sauce is affordable and comes in three different flavors at Walmart: hickory pepper, mesquite molasses and cherry chipotle.

Grilled BBQ Chicken Salad
Grilled BBQ Chicken Salad is ready in just 15 minutes and is loaded with barbecue grilled chicken, grilled corn, black beans, fresh tomatoes and bell peppers and a BBQ ranch dressing!
Prep Time: 7 minutes Cook time: 8 minutes Total time: 15 minutes
INGREDIENTS
- 1/4 cup Hunt’s Cherry Chipotle BBQ Sauce
- 1 pound boneless, skinless chicken breasts
- 1 large cob of corn
- 8 cups romaine lettuce, chopped
- 1 can low-sodium black beans, drained and rinsed
- 1 large tomato, diced
- 1/2 green bell pepper, diced
- 1/2 orange bell pepper, diced
- 1/2 red onion, sliced
- BBQ Ranch Dressing
- 1/3 cup light ranch dressing
- 1/4 cup Hunt’s Cherry Chipotle BBQ Sauce
INSTRUCTIONS
- Brush chicken breasts with BBQ sauce. Grill on high for about 4 minutes on each side until chicken is cooked through and grill marks appear on chicken. Cook corn on the cob on grill as well turning frequently.
- Meanwhile, chop veggies for salad and mix together ingredients for BBQ ranch dressing.
- Remove chicken and corn from grill. Slice chicken into slices and cut corn off of cob.
- Toss together all ingredients for salad and drizzle with BBQ ranch dressing.
