Strawberry Chia Seed Pudding
Strawberry Chia Seed Pudding takes 2 minutes to make and is a healthy, filling breakfast or snack rich in fiber, protein and omega-3s. Sweetened with strawberries and honey for a delicious treat!
Chia seed pudding makes a delicious and nutritious breakfast that hardly requires any prep time at all. Just mix the ingredients together, mix them up and let it all sit in the fridge for at least 2 hours. Breakfast or snack will be ready in no time! I have a few easy chia seed pudding recipes on the blog already including Blueberry Vanilla Chia Seed Pudding, Chocolate Peanut Butter Chia Seed Pudding, and Vanilla Berry Chia Seed Pudding.
The kids and I absolutely LOVE chia seed pudding and when I recently found a great deal on strawberries, knew that I wanted to use some for a healthy breakfast of strawberry chia seed pudding. Chia seeds are rich in fiber, protein and most importantly, omega-3 fatty acids. The kids know that chia seeds are "good for their brains" and that we pretty much eat them daily.
FYI, I priced out chia seeds at Amazon, Sam's Club, Walmart and ALDI because we go through them like crazy and found that the best deal (that I could find) was a 2 pound container of Better Body Foods organic chia seeds for $6.82. I stocked up on 2 big containers because I get nervous when we run low haha! Not sponsored at all, just sharing a deal I found.
This strawberry chia seed pudding is full of sweet strawberry flavor. I used fresh strawberries and microwaved them to make a little strawberry sauce but feel free to use frozen strawberries as well. Either works! I recently got the best deal on strawberries. Eight pounds of strawberries for literally $2! We have been in heaven making all of the strawberry recipes.

Prep Time: 5 minutes Cook time: 0 minutes Total time: 5 mins
INGREDIENTS
- 1 cup strawberries, chopped and microwaved for 3 minutes
- 1/2 cup chia seeds
- 2 cups milk of choice
- 1 tablespoon honey
- Sliced strawberries to top
INSTRUCTIONS
- Mix all ingredients together and refrigerate overnight or at least for 2 hours.
- Top with sliced strawberries.
