Pork Fajita Kebabs

Pork Fajita Kebabs are ready in 30 minutes, are full of fajita flavors and are nutritious with marinated fajita lime pork, colorful bell peppers and onions!
We have fired up our grill quite a few times already and I'm loving it! There is nothing quite like the taste of grilled food for a meal that makes it feel like summer is on its way. I wanted to create a fun recipe that would be perfect for Cinco De Mayo coming up that would be loaded with flavor, healthy and fairly easy to make. These grilled pork fajita kebabs were the perfect addition to our Cinco De Mayo menu!
I kept it simple with a blend of Mexican spices that we always have on hand: garlic powder, onion powder, chili powder and cumin. If you like spicy foods, feel free to add in cayenne powder. I marinated a mixture of these spices all over cubes of lean trimmed pork loin along with some olive oil and fresh lime juice. On the kebabs are also different colors of bell peppers and onions which always taste amazing grilled.
Kebabs are a perfect summer food. You can make them earlier in the day and let them marinate in the fridge. They cook really quickly on the grill because the food is cut into small bite sized pieces. I love eating kebabs outdoors at our patio table. You can eat these grilled pork fajita kebabs as is or pair them with some rice or a Mexican-inspired salad such as my favorite black bean salad.
For these pork fajita kebabs, I used Smithfield All Natural Boneless Loin Filet. Our family is a huge fan of Smithfield® products, especially their pork loin and pork tenderloin products. They can be found at Walmart, are affordable and are a great source of protein. I just trim off any extra fat on the meat and either throw it in the slow cooker or on the grill for the most part. This pork was quite lean and I only needed to trim a little bit off it it.
Smithfield All Natural Fresh Pork is always juice and tender and has no added steroids, hormones or artificial ingredients. It is high quality and I feel good about serving it to my family. We love pulled pork with a homemade BBQ sauce as another lean pork option. It is found in the refrigerated section of the store and is fresh and never frozen.
My kids really enjoyed eating the pork fajita kebabs taken off the kebab and over a bed of salad. They are super full of flavor and would be fun eaten in a tortilla if you like as well. They work well for leftovers too.

Pork Fajita Kebabs
Pork Fajita Kebabs are ready in 30 minutes or less, are full of fajita flavors and are nutritious with lean pork, colorful bell peppers and onions!
Prep Time: 20 minutes Cook time: 10 minutes Total time: 30 mins
INGREDIENTS
- 1 pound Smithfield All Natural Boneless Loin Filet, trimmed and cut into 1 inch pieces
- 1 tablespoon olive oil
- Juice from 1 lime
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 red bell pepper, cut into 1 inch pieces
- 1 orange bell pepper, cut into 1 inch pieces
- 1 yellow bell pepper, cut into 1 inch pieces
- 1/2 red onion, cut into 1 inch pieces
- 2 teaspoons olive oil
INSTRUCTIONS
- In a large zipped bag, toss in cubes of pork, olive oil, lime juice and spices and mix together well. Let marinate for about 30 minutes or even the night before if time allows.
- Meanwhile, soak the skewers if wooden in water so that they do not burn.
- On skewers, thread pieces of pork, bell peppers and onions alternating ingredients.
- Turn on grill and place kebabs onto grill. Drizzle with olive oil to prevent sticking. If you have a grill mat, feel free to use that to prevent sticking.
- Cook kebabs for about 4 minutes on each side until pork is cooked through and has light grill marks on it.
- Serve with salsa, sour cream and guacamole if desired.
