Apple Cinnamon Baked Oatmeal Cups
Apple Cinnamon Baked Oatmeal Cups have the texture of a muffin, are perfect for meal prep and are packed with nutrients for a healthy breakfast!
I wasn't even planning on sharing these Apple Cinnamon Baked Oatmeal Cups on the blog but when I started smelling the apple cinnamon scent coming from my oven and tasted them, I quickly decided that I needed to share these with you ASAP! Apple Cinnamon Baked Oatmeal Cups are amazing for meal prep because you can bake them ahead of time and enjoy them for a few days afterwards. They heat up nicely but I actually preferred them at room temperature.
I've made baked oatmeal cups before but used regular oats and steel-cut oats. This time, I only had quick cook oats on hand and I preferred them so much better to the other kinds of oats in this particular recipe. They made the oatmeal cups more like a muffin texture even though they are mostly made of oats. For baked oatmeal cups, I won't go back to using any other kind of oat.
I made these apple cinnamon flavor because I knew that my kids would love them. I was definitely right! Both kids gobbled them up which is awesome because they are not necessarily the biggest fans of oatmeal- at least not as much as these baked oatmeal cups!
Apple Cinnamon Baked Oatmeal Cups can be heated and cut up or can be eaten one-handed like a muffin. Whatever way you prefer! The ingredients are simple and nutritious. I didn't add flax, chia or protein powders but if you want to add any of those, I think that they would be great.

These baked oatmeal cups are so easy to make! You just mix the ingredients together, toss them into a sprayed muffin liner and bake. They are one of the easiest recipes that you probably already have the ingredients on hand for.
Can you freeze baked oatmeal cups?
Yes, baked oatmeal cups are very easy to freeze. Just put them in a zipped plastic bag or a plastic storage container and freeze for up to 3 months.I made these apple cinnamon flavor because I knew that my kids would love them. Yield: 12 oatmeal cups
Apple Cinnamon Baked Oatmeal Cups
Apple Cinnamon Baked Oatmeal Cups have the texture of a muffin, are perfect for meal prep and are packed with nutrients for a healthy breakfast!
Prep Time: 5 minutes Cook time: 20 minutes Total time: 25 mins
INGREDIENTS
- 3 cups quick cook oats
- 1 1/2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 cup milk
- 1 cup unsweetened applesauce
- 2 eggs
- 1/4 cup honey
- 1 finely diced apple
INSTRUCTIONS
- Preheat the oven to 375 degrees.
- Mix all ingredients together.
- Spray muffin liners with nonstick spray and fill each cup with oatmeal mixture in a muffin tin.
- Bake for 20 minutes until oats are fully set and mixture is not liquidy.
