Pear and Blue Cheese Stuffed Chicken
Pear and Blue Cheese Stuffed Chicken features an oven baked chicken breast stuffed with fresh pears, blue cheese and spinach and is topped with a creamy Dijon sauce!
Happy Holiday season! Do you have lots of parties planned? Are you hosting? Troy and I are hosting Christmas Day and we are super excited to have everyone over. I wanted to make a holiday entree that is super impressive but easy enough to make. This Pear and Blue Cheese Stuffed Chicken is sure to impress guests and can be enjoyed year-round.
Everyone knows that pears and blue cheese go together so well which is why I wanted to make this pear and blue cheese stuffed chicken to share. It is full of flavor and has a creamy Dijon sauce that goes over the stuffed chicken breast which is so delicious. You could actually call this a sheet pan dinner because everything is cooked in the oven and is done at about the same time. I roasted some potatoes and vegetables with the chicken to make it a complete meal.
With the weather being cold, I have mostly retired the grill for the season and have turned on the stove and oven. We swapped sauteed chicken and baked chicken recipes for grilled ones. I am excited about this because that means that I can stuff the chicken! I love stuffed chicken recipes because I think that they are impressive but are actually so easy to make!
My husband especially went crazy for these! He thought that they were so fancy, full of flavor and moist. I was shocked because he is not crazy about fruit on savory foods but loved these. My kids enjoyed the meal as well. The flavor combination of everything went together so well.
I love cooking with pears because not only are they super tasty but they are also packed with nutrition. Did you know that pears are one of the highest fiber fruits? One medium pear has about 6 grams of fiber and is rich in vitamin C. Some ways that we love eating pears are: sliced on peanut butter toast, to add sweetness to homemade cranberry sauce, in seasonal salads and on a cheese board. Try some pears in your next dish soon!
December is National Pear Month and this is the perfect recipe to celebrate with. My dad grows his own pears and we have been blessed to be snacking on fresh pears from his trees from about September to January of each year. I have a whole drawer full in my fridge right now of fresh pears.

Pear and Blue Cheese Stuffed Chicken
Pear and Blue Cheese Stuffed Chicken features an oven baked chicken breast stuffed with fresh pears, blue cheese and spinach and is topped with a creamy Dijon sauce!
Prep Time: 5 minutes Cook time: 25 minutesTotal time: 30 mins
INGREDIENTS
- 4 medium boneless-skinless chicken breasts
- 1 pear, sliced thinly
- 1/3 cup blue cheese crumbles
- 3/4 cup baby spinach
- 2 teaspoons olive oil
- 3 tablespoons Dijon mustard
- 1/2 teaspoon black pepper
- 1/3 cup reduced-fat sour cream
- 1/2 teaspoon onion powder
INSTRUCTIONS
- Preheat oven to 400 degrees.
- Spray a baking pan with nonstick spray. Cut each chicken breast across the long ways but not all the way through.
- Stuff the chicken with the blue cheese, pear slices and spinach. Drizzle each chicken breast with 1/2 teaspoon olive oil. Sprinkle with black pepper and onion powder.
- Bake for about 20 minutes until chicken is cooked through. Whisk together the Dijon mustard, black pepper, sour cream, and onion powder and pour over chicken breasts. Return to oven for an additional 5 minutes.Enjoy!
***To cook the vegetables and potatoes: drizzle on olive oil and roast until cooked through.Sprinkle on spices such as garlic powder once done roasting.
