Mediterranean Hummus Bites
Mediterranean Hummus Bites are loaded with red pepper hummus, kalamata olives, tomatoes, cucumbers, and feta cheese on a toasted English muffin for an easy appetizer ready in 10 minutes that everyone will love!

I love to entertain and love to find easy recipes to make that everyone will love, but won't take all day to make. Whenever I have people over, if we aren't eating dinner right away, I will put out a couple of easy appetizers or snacks. Anything Mediterranean is a favorite with my family and Troy's family so I know that those types of recipes are sure to be favorites.
I made these Mediterranean Hummus Bites for an easy appetizer that would be good anytime of year, especially the holidays! We often go to a couple of holiday events where we have to bring an appetizer and these bites would be perfect for it. You can feel free to make your own roasted red pepper hummus but to be honest with you, I used store-bought hummus because it is not expensive and I think that it tastes nearly as good as homemade.
I topped toasted English muffins with the hummus, feta cheese, kalamata olives, fresh tomatoes, cucumbers and parsley. The recipe that I was following called for sun-dried tomatoes so you can feel free to use those if you prefer.
This recipe is so easy that my 4-year old could help me, no problem! I only hire the best for The Nutritionist Reviews which is why my assistant is perfect. Nothing like licking the hummus and your fingers in between every bite. We made this fun little video together to show you how to make these Mediterranean Hummus Bites. Mediterranean Hummus Bites
Mediterranean Hummus Bites are loaded with red pepper hummus, kalamata olives, tomatoes, cucumbers and feta cheese on a toasted English muffin for an easy appetizer ready in 10 minutes that everyone will love!
Prep Time: 5 minutes Cook time: 5 minutes Total time: 10 mins
INGREDIENTS
- 4 BAYS English Muffins
- 3/4 cup roasted red pepper hummus
- 3/4 cup crumbled feta cheese
- 1/2 cup pitted kalamata olives, chopped
- 1/2 cup cherry tomatoes, sliced
- 1/4 cup cucumber, chopped
- 2 tablespoons chopped parsley
INSTRUCTIONS
- Toast English muffin halves in toaster or oven.
- Spread hummus evenly across toasted muffin halves.
- Top with feta, olives, tomatoes, cucumber and a sprinkle of parsley.
- Cut into pieces if desired and serve!

The star of the recipe aside from the flavorful toppings is the perfectly toasted Bays English Muffins. English muffins are traditionally enjoyed at breakfast but honestly, you can use them for any meal.
