This meal is perfect! I made this meal on a night when my to-do was crazy long and I was feeling overwhelmed. You can seriously get this meal in the oven in just about 5 minutes. Then, you check it after 15 minutes flipping the ingredients and cook for another 10. Then, dinner is served! It is a pretty hands-off meal, is so easy to make and super customizable. Other veggies that would be great are broccoli, zucchini, squash, sweet potatoes or any other vegetable you can roast.
My family enjoys this meal because there is something for everyone. My husband loves the pork, I love the brussels sprouts and the kids love the potatoes and carrots. It is nutritious as well! Full of fiber and vitamins and minerals from the veggies and rich in protein from the pork. This meal is gluten-free and dairy-free as well.
I love any of the Smithfield Marinated Fresh Pork varieties from Walmart and they are awesome to save time marinating and taste great. For this recipe, I used Smithfield Roasted Garlic and Herb Fresh Pork Loin Filet. It is super flavorful and you don't even need to add any sauces or other flavors.
I make it in the slow cooker or oven and then use it for a variety of meals like pulled pork tacos, pork sandwiches with coleslaw, on salads and for nachos. So many easy options. This pork provides Real Fresh, Real Flavor, Real Fast! You can grill it, roast it, bake it, saute it or slow cook it. If you need to cook it quicker, you can cut it into pieces such as bite sized pieces for stir-frying or slices for grilling. So many ways to cook it.

INGREDIENTS
- 1 1/2 pounds Smithfield Roasted Garlic and Herb Fresh Pork Loin Filet, trimmed
- 1 pound small Brussels sprouts
- 1 medium summer squash, chopped
- 1/2 red onion, chopped
- 2 large carrots, peeled and chopped
- 2 cups baby red potatoes, chopped into small pieces
- 1 1/2 tablespoons olive oil
- 1 1/2 teaspoons garlic powder
- 1 teaspoon Italian seasoning
INSTRUCTIONS
- Preheat oven to degrees. Slice pork loin into 1 1/2 inch slices.
- Toss vegetables with olive oil. Place veggies and pork on sheet pan.
- Bake for 15 minutes. Flip pork and vegetables. Sprinkle vegetables with garlic and herbs.
- Bake for another 10 minutes until pork is cooked through and potatoes are soft.
