Strawberry Spinach Salad with Warm Bacon Vinaigrette
Strawberry Spinach Salad with Warm Bacon Vinaigrette is the perfect salad with red onions, strawberries, crispy bacon, toasted nuts and a warm bacon dressing!
We recently took a trip up north in Michigan and I had a salad that was so delicious that I had to recreate ASAP. I love salads but I feel like it isn't too often that you eat a salad and say "oh my gosh, that was the best thing that I ate on this vacation". Well, this salad was truly that good. I loved it so much and knew that I had to make it before summer was over- though you could make it any time of year.
Though bacon is not the picture of health, I think that it can fit into a healthy diet. The rest of this meal is nutritious and the bacon adds the perfect flavor that you really cannot find in other foods. The salad that I had on vacation had a warm bacon vinaigrette and I thought it was genius.
It helped to soften the spinach a tiny bit and went together so well. You could make this salad for the fall and swap the strawberries for thin apple slices and butternut squash. That would be amazing too!
International Bacon Day is coming up and this salad is sure to be a favorite if you are a bacon lover. If you want additional protein, you can top with grilled chicken, pecans or blue cheese. It's totally up to you!
For this recipe, I broiled my bacon according to directions on the package for 6 minutes flipping once on my Chicago Metallic Baking Sheet. It is a heavy duty nonstick baking sheet. This is a smaller pan (14.75 x 9.75 x 1 inch) and I also have a large Chicago Metallic nonstick baking sheet that I have had for 9 years and though it doesn't look new like this one since I use it all the time, it is still in excellent condition and has many years left in it. This brand is affordable yet high quality. I highly recommend it!

Strawberry Spinach Salad with Warm Bacon Vinaigrette
Strawberry Spinach Salad with Warm Bacon Vinaigrette is the perfect salad with red onions, strawberries, crispy bacon, toasted nuts and a warm bacon dressing!
Prep Time: 5 minutes Cook time: 10 minutesTotal time: 15 mins
INGREDIENTS
- 8 slices bacon
- 6 cups baby spinach
- 1 pound strawberries, sliced
- 1/2 red onion, sliced
- 1/2 cup walnuts
- 1 tablespoon brown sugar
- Warm Bacon Vinaigrette
- 2 tablespoons bacon drippings
- 1 teaspoon garlic powder
- 1/4 cup red wine vinegar
- 2 teaspoons dijon mustard
- 1/2 teaspoon black pepper
INSTRUCTIONS
- Cook the bacon according to instructions on a baking sheet, until crispy. Save the drippings from bacon for the vinaigrette. Chop bacon into small pieces.
- In a pan, toast pecans for about 2-3 minutes with brown sugar until toasted. Watch carefully so that they do not burn.
- Whisk together all ingredients for bacon vinaigrette. Heat if needed.
- Toss spinach with strawberries, onions, walnuts, bacon and warm bacon vinaigrette.

ReplyDeleteI made this tonight (with walnuts), and wow! It is so good! My husband really loved it. He had two bowls and asked if he could have the little bit that was leftover for his lunch tomorrow. Thanks so much! Gonna try the pecans next time...! :)
