Guacamole Deviled Eggs
Guacamole Deviled Eggs is an awesome appetizer that features hard boiled egg whites filled with flavorful guacamole with jalapeno and tomatoes.

Family mealtime means the world to me. I grew up eating breakfast, lunch and dinner with my family each day unless we were in school. Family mealtime is a time that you get to enjoy a meal together while talking about your day. Now that I am a parent myself, family mealtime is super important to me and my family. We eat all of our meals together- no feeding the kids first and then us.
I find this time to be crucial for good conversation, learning to enjoy a wide variety of nutritious foods and to get to know one another better. When my kids see us eating guacamole deviled eggs, they want to do the same thing. My kids are both great eaters and I think that over the years, by them seeing us eat everything, they have learned that it is normal to do the same.
We always talk a bunch during our meals and talk about our day and what we did that day, things that we have coming up, tell stories, talk about the food and more. Our dinner table is always filled with laughter and love (and a few times saying sit down and eat your dinner of course..).
I teamed up with my favorite egg company Eggland's Best who teamed up with the American Heart Association to talk about their Family Meals Pledge through the Healthy For Good movement. They know how important it is for families to spend time together eating healthy and nutritious meals. Family meals benefit the health and wellbeing of kids. These delicious Guacamole Deviled Eggs have been on my list to make for a couple of years now and thanks to the great recipe approved by the American Heart Association, I finally made it happen. Not that there is anything wrong with eggs yolks but in this recipe, I scooped out the yolks and filled the hard boiled egg whites with homemade flavorful guacamole for a great component to any family meal.
The Guacamole Deviled Eggs uses Eggland's Best eggs which are a good source of vitamin D, B12, E, B5 and riboflavin. They have 6x more vitamin D, double the omega-3s, 10x more vitamin E and 25% less saturated fat than regular eggs. They also stay fresher longer. I have been a fan of these eggs for years! Guacamole Deviled Eggs
Guacamole Deviled Eggs is an awesome appetizer that features hard boiled egg whites filled with flavorful guacamole with jalapeno and tomatoes.

INGREDIENTS
- 9 large eggs
- 1 avocado, halved and pitted
- 2 tablespoons fat-free sour cream
- 1 1/2 teaspoons lime juice
- 1 Roma tomato, finely chopped
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1-2 teaspoons jalapeno, finely chopped
- Optional: garlic and onion powder for flavor
INSTRUCTIONS
- Make the hard-boiled eggs: Fill a large pot with water, add all the eggs, and bring mixture to a boil over high heat. As soon as the water begins to boil, cover with a lid, remove pot from the heat, and let eggs sit for 10 minutes. Drain water and transfer eggs to a bowl of cold water to cool.
- When the eggs are cool enough to handle, remove the shells. Slice each egg in half lengthwise. Remove the yolks, adding just 2 whole egg yolks into a medium bowl and discarding the remaining 7 egg yolks. Place the egg white halves onto a platter.
- Slice the avocado in half and remove the pit. Use a spoon to scoop the avocado’s flesh into a bowl. Use a fork to mash the egg yolks and the avocado together. Stir in the sour cream and lime juice.
- Remove the seeds from the tomatoes with a spoon and discard; finely chop the tomato, along with finely chopping the scallions. Add both to the mashed avocado, along with salt, pepper, and optional jalapeno. Stir together to combine.
- Spoon the guacamole into each egg white half, dividing the mixture between all 18. Garnish with a sprinkle of dried or fresh chopped cilantro, if desired. Serve.
