For 4th of July, my mother-in-law made the best Greek Orzo Pasta Salad and I've been thinking about it ever since! It was so good that I honestly ate three bowls of it for lunch and then enjoyed it as leftovers later. It was so, so delicious and the perfect meal or side dish for anytime. The best part about it is that it is super easy to make and is something that the whole family will love. My kids sure do love it!

This time, I made it with cucumbers, bell peppers, tomatoes, red onion, garbanzo beans, basil and feta along with a homemade Greek vinaigrette. You can also buy a Greek dressing if you prefer. Some other add-ins that are awesome are kalamata olives, beets, parsley and artichokes. Use what you have on hand and prefer. You can make it several different ways and it will turn out delicious any of these ways.

INGREDIENTS
- 1 pound of whole-wheat orzo pasta
- 1 medium green pepper, diced
- 1/2 medium cucumber, diced
- 1/2 red onion, diced
- 1 tomato, diced
- 1 cup garbanzo beans, drained and rinsed
- 1/2 cup feta cheese
- Greek Vinaigrette:
- 2 tablespoons cup red wine vinegar
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon Italian spices
- 2-3 tablespoons fresh basil leaves, diced
- Optional: salt to taste
INSTRUCTIONS
- Cook pasta according to directions. Drain pasta.
- Meanwhile, chop all vegetables and drain and rinse beans.
- Whisk together Greek vinaigrette.
- Toss all ingredients together. Enjoy!
**Stores well in the fridge for a few days.
